CHICKEN A LA KING
3 chicken breasts, cubed
1 can cream of mushroom soup
1 can cream of celery soup
2 cans chicken a la king
1 cup of cream
1 pkg. frozen mixed vegetables
1 pkg. Sliced mushrooms
Dash of salt
Dash of pepper
Dash of cayenne pepper
3 tbsp. sherry; optional
Biscuits, noodles, toast or puffed pastries.
Combine all of the above ingredients in a saucepan and simmer for 8-10 minutes. Spoon over lightly toasted bread, biscuits, noodles, mashed potatoes, rice or puffed pastries. Serve with a dinner salad.
PENNE WITH LEEKS AND BACON
12 oz (350g) penne or macaroni
3 small leeks, cleaned and chopped
6 oz (175 g) streaky bacon, de-rinded and chopped
olive oil
2 oz (50 g) butter
For the sauce:
2 oz (50 g) butter
2 oz (50 g) plain flour
1½ pints (850 ml) milk
6 oz (175 g) Cheddar cheese, grated
3 fl oz (75 ml) heavy cream
freshly grated nutmeg
salt and freshly milled black pepper
For the topping:
2 level tablespoons freshly grated Parmesan
1 level tablespoon breadcrumbs
2 pinches cayenne pepper
You will also need a 3 pint (1.7 litre) pie dish, well buttered.
Start by bringing a large saucepan of water to simmering point, add some salt, a few drops of olive oil and the pasta, then bring back to the boil and cook for 10 minutes exactly. Then turn the pasta into a colander and, to prevent it cooking any further, rinse it under the cold tap.
While the pasta's cooking, melt the butter in a pan and soften the leeks and bacon over a low heat and, in another pan, make the white sauce with the butter, flour and milk and leave it to simmer very gently.
Now turn the pasta, leeks and bacon into the prepared pie dish and mix them well together. Next stir the grated cheese into the sauce, season to taste with salt, pepper and nutmeg and, finally, add the cream. Then pour the sauce over the ingredients in the pie dish, sprinkle the top with the Parmesan, breadcrumbs and cayenne pepper.
This is a dish which can be prepared well beforehand then, when it's needed, put into an oven pre-heated to gas mark 4, 350°F (180°C) for 30-40 minutes till the top is nicely browned and the sauce bubbling.
SPINACH AND BACON QUICHE
Prep Time: 15 minutes
Cook Time: 45 minutes
Yield: 8 servings
6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

EASY CHICKEN ENCHILADAS
1 8 oz pkg of softend cream cheese
1 small container of sour cream
1 large jar of medium to hot salsa
4 chicken breasts
10-12 corn or flour tortillas
1 pkg of taco cheese
Season chicken breasts to taste and grill or you can just boil them until no longer pink.
Cut cream cheese brick into cubes.
Cut cooked chicken into bite sized pieces and add to cream cheese. Stir until melted, then stir in 1/2 of jar of salsa.
Warm tortillas in microwave until softened.
Add a heaping tablespoon of chicken mix to tortilla and roll up. Place seam side down in a greased 9-13 pan.
After all of chicken mix is used, mix sour cream and the rest of the salsa together in a separate bowl. Spread over the enchiladas. Cover with cheese and bake until cheese is melted and golden brown.
Enjoy!
MEXICAN CHILI CASSEROLE
(May be made day before - refrigerate - cook next day when needed.) 2 cans (15 oz.) Mexican style chili beans 4 corn tortillas (or flour) 1/4 lb. Cheddar cheese, grated 1 sm. onion, diced 1 can (8 oz.) tomato sauce Cayenne pepper (optional) Garlic (optional)
Brown beef with onion (and cayenne and garlic optional); drain. Stir in chili beans. Simmer a few minutes.
Butter tortillas slightly. Place one tortilla in bottom of 1 1/2 quart buttered casserole dish.

Easy Stir Fry....prepeare rice of your choice as instructions on box say. In a pan add a little oil, cut up onions, peppers, garlic (optional) salt and pepper and saute...add frozen or fresh veggies to preference, add teriyaki sauce and cook till veggies are done. Serve over rice.
Spaghetti Sauce---brown ground round (hamburger meat)...drain off any excess fat. add chopped onions and peppers and cook till onions are clear, season with salt pepper add fresh garlic or garlic powder...add one can or jar of spaghetti sauce...your preference, add a dash of oregano, a dash or two of worchestershire sauce and stir will cooking....cook either dried or fresh pasta to instructions and serve.

1: Diced chicken lightly pan fried add mix herbs onions garlic then add cream.
2: Mince mixed with tomatoes and onions fried add vegies
3: stir fried vegies
these all take a very small time to prepare and cook and are relatively cheap

Mac & cheese. Tuna cassserole with hamburger helper. Boiled turkey legs in sprite (instead of water), tobasco(not kidding) and garlic salt. Boil for 30-45 mins....bbq next if you want or eat as is

all three can be made in a slow cooker(crock pot).
slow cookers come in really handy and taste like home.
