what is the difference between "living in hope" and "things hoped for"?

The two really are the same...Hope, in these examples,indicate a sure thing(expectation),which is not synonomous with the modern day definition of Hope(a maybe,cross your fingers). your 2nd example of course being part of the definition of Faith: which is..The substance of "things hoped for"(a sure thing),the evidence of things not seen.

Living in hope...is living in Expectation.

living in hope means you live in hope and things hoped for is things that are hoped for.

living in hope= living your life to what you believe "will Happen" or is promised.
things hope for= hoping it comes to pass
