We decided on the spur of the moment to have a surprise birthday breakfast for our nephew. This will be bright and early, since rudely waking him up and rolling him out of the bed is part of the surprise....this means I need to have something already assembled and ready to pop in the oven.

Since I've never made breakfast casserole before, I would also like to have a recipe that is tried and true - preferably one that looks as appealing as it tastes. Does anyone have a good family recipe or know a reliable website for recipes like this?

These not only CAN be assembled ahead, they MUST be! Enjoy! All I have T&T myself and love them all!

Sausage Breakfast Casserole

1 lb. breakfast sausage, browned and crumbled (chopped ham is good, too)
12 eggs
2 cups milk
2 tsp. salt
1 cup grated Cheddar cheese
2 tsp. dry mustard
6 cups cubed, stale French or Sourdough Bread

Place cooked sausage on the bottom of a greased 9" x 13" baking dish. Add bread evenly on top. Beat eggs, milk, and seasonings. Pour over sausage and bread. Sprinkle cheese on top. Cover with foil. Refrigerate overnight. Before baking, press bread down gently into casserole dish. Bake 350º for 50 minutes or until light golden brown and set in center. Serves 8.

Farmer's Brunch Casserole

3 cups shredded hash browns or sliced potatoes
3/4 cup (3 oz.) shredded Monterrey Jack Cheese
1 cup diced fully cooked ham
¼ cup sliced green onions with tops
4 beaten eggs
1½ cups milk
¼ tsp. pepper
Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers

Preheat oven to 350°. Spray 2 quart baking dish / pie plate with nonstick spray. Arrange
potatoes evenly in the bottom of the baking dish. Sprinkle with cheese, ham and green onions.
Combine milk, eggs and pepper. Pour over potato mixture. Bake uncovered for 40-45 minutes until center appears set. Let stand for 5 min. before slicing. Serve with fresh melon wedges and fresh berries and sweet bread / muffins.

Sugar Pie's Blueberry-Stuffed French Toast Casserole

Nonstick cooking spray
9 eggs, beaten
2 cups milk
¼ cup melted butter
½ cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)

Preheat oven to 350ºF. Grease a 3-quart rectangular baking dish with cooking spray; set aside.

In a smaller bowl combine eggs, milk, butter, and the ½ cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.

Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Make Ahead Breakfast Casserole

Ingredients:
1 lb bulk pork sausage
10 cups fresh bread, cut into cubes
10 ounces chopped broccoli, thawed and drained
4 ounces mushrooms, drained
8 ounces cheddar cheese, shredded
6 eggs, beaten
3 cups milk
1 cup Miracle Whip
2 tablespoons flour
1 tablespoon dry mustard
2 teaspoons dried basil
1 teaspoon salt

Steps:
1. Brown sausage, drain.

2. Add bread cubes, broccoli, mushrooms and cheese; mix lightly.

3. Spoon into 13 x 9 baking dish.

4. Pour combined eggs, milk, dressing, flour and seasonings over bread mixture; cover.

5. Refrigerate at least 1 hour or overnight.

6. Heat oven to 375 degrees.

7. Bake, uncovered for 1 hour.

I make this all the time, let it sit in the fridge over night after you make it, it only gets better


CHEESE AND HAM STRATA

7 slices thin white bread
2 c. shredded cheddar cheese
1/4 lb. shaved chopped ham loaf luncheon meat
4 eggs
1 1/2 c. shaved chopped ham loaf luncheon meat
4 eggs
1 1/2 c. milk
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. prepared mustard
1/4 c. Parmesan cheese

Tear bread into bits and arrange in buttered baking pan. Tear shaved ham into bits and arrange on top of bread. Scatter shredded cheese over bread and ham mixture. Mix together in bowl, eggs, milk, salt, pepper and mustard. Pour liquid mixture over ingredients in pan. Top with Parmesan cheese. Bake for 30 minutes in uncovered pan at 350 degrees. Loosen strata from pan sides after removing from oven.
