I see two logical explanations. Although, both may be considered illogical by some..
1 - God is completely crazy, murderous, supports slavery, punished them to make himself feel better etc. making him the biggest jerk of all time.
2 - God is imaginary.
I'm much more comforted by number 2.

The bible says in Genesis: after they ate of the fruit their eyes were open to know good and evil. Prior to disobeying God they could not make this distinction. God did not place the tree nor the serpent in the garden for a evil objective but for an alternitive of choice. He gave them both a choice to obey Him, which demonstrated their love for their creator, or to choose their own way . Yes God knew that there was a possibility of them failing the test so he provided a redeemer Jesus to bring them back to God in advance, and all who choose this pathway back to God will get another chance through Jesus (the last Adam) start over again for eternity.
In The book of Deuteronomy 30:19- God says that he places before us all life, death, blessing and cursing and says to choose life that we may live. All around us there are things of choice and we still choose evil because we have a free will. If everything was good around us we would have no choice but to be good, however since we know right from wrong and our eyes are open to discern we tend to choose evil anyway; it is not God who's at fault just your own

There are 2 stories of creation in the first book of the bible, why dwell on this one. you could be asking why the bible says thou shalt not kill and god kills everyday, if not one leaf falls or nothing happens without gods blessing, then when people die in accidents which are acts of nature, god has killed them, thou shalt not kill. if it's against the bible to screw your sister (no I don't wanna screw mine). then how did adam and eve have a 3rd generation. the bible clearly says thou shalt no go into thy sister. somebody had to screw their sister for us to be here. also if god knows everything why did he have to ask adam what was up? he should have known. there is a supreme power I am pretty sure of it, but I am not so sure it plays out the way the jews would have us believe.

In order for it to be possible for Adam to exercise his free will he had to be given a choice. Adam had to know that he was making a choice, to realize that he was choosing to do what God said to do.
The consequences of eating of the fruit of the tree of the knowledge of good and evil were that in the day that he ate thereof he would surely die. He knew what that meant.
The knowledge of good and evil that was acquired was experiential. He experienced death and knew first hand what before he had only known conceptually.
The consequences of either obeying God or disobeying him had to carry the same weight in terms of their finality. And they were both everlasting.
The consequences of our believing God and repenting of sin or to rejecting his forgiveness and continuing in sin have the same aspect of being everlasting.

The story of Adam and Eve is an allegory. It is not meant to be taken literally. The Bible is the symbolic account of the fall and restoration of the human soul to its divine origins.
Genesis is the symbolic testimony of humanity's fall from heaven and paradise lost.
Revelation is the symbolic testimony of humanity's restoration to heaven and paradise found.
When taken literally, the story is nonsensical. That's why there are always so many questions about the account of Adam and Eve in the Garden of Eden. Try as they might, Christianity has no answers for the "literal" story.

God wants a real relationship with us. The only way to have that is if we have the ability to reject Him. Loving God you love Him means nothing until you have the option of not loving Him. God had to give us a choice or He couldn't have a relationship with us which is what He wants.
