I do have an opportunity to take a year of sabbatical, during which time I hope she'll demonstrate her lousy work ethic and terrible interpersonal skills and get fired.

I love my job and would miss it, not to mention losing that money, but I just don't know how I could face her each day without strangling her.

What do you think I should do?

You can do one of two things. Take the sabbatical and hopefully she'll hang herself during this time OR you can stick around and help put the noose around her neck.

I think you need to grow up and have an adult conversation with her. Be friendly to her even if it kills you. If she's really as bad as you say she would not have gotten the promotion. Just get over it and find a way to work positively with her. The more you attempt to rebel against her, the more likely you will not be seen as a team player and could get canned.

Time to be a professional and step up to the plate.

I'd take the sabbatical.
