I'm going to a large-ish party tomorrow and have been asked to bring an appetizer. I love to cook and I have a gazillion appetizer recipes, but most of my best ones are hot. I have a hunch that my hostess will have other uses for her own oven than reheating my app's! So who has a great recipe, a little bit "elegant", meant to be served cold or room temperature, that's not too hard to bring along?

Best of all is a recipe where mayonnaise is not involved--I can't stand it. :)

roasted red peppers with fresh mozzarella and basil

TORTILLA PINWHEELS

FILLING:

8 oz. dairy sour cream
1 pkg. (8 oz.) cream cheese, softened
1 can (4 oz.) diced green chilies, well drained
1 can (4 oz.) chopped black olives, well drained
1 c. grated Cheddar cheese
1/2 c. chopped green onion

5 (10 inch) flour tortillas
Salsa

Mix all of the ingredients together thoroughly. Divide the filling and spread evenly over the tortillas; roll up tortillas. Cover tightly with plastic wrap, twisting ends; refrigerate for several hours.
Unwrap; cut in slices 1/2 to 3/4 inch thick. Discard ends. Lay pinwheels flat on glass serving plate. Leave space in center of plate for small bowl of salsa if desired.

I just had something cool today;-} ideal for a summer party.

Take green (spinach) wraps, spread with cream cheese mix.
You can add parsley to the cream cheese for added colour.
Place row of thin slices of cucumber about 2" from edge.
Roll up tightly, jelly-roll style, with cucumber in centre.
Wrap each roll in plastic wrap & chill overnight.

To serve, trim ends, slice in pinwheels, straight or angled.
You could substitute red pepper strips for the cucumber,
use with pink (tomato) tortilla wraps instead.

You could add thin slices of roast beef or ham.
You'll get 8 pieces out of one 9" tortilla wrap.

Just make fancy tartines.

Get or make a baguette and slice it into thin disks--half an inch each.

Smear (gracefully) something different onto each of them, cream cheese mixed with different spices to suit your tastes, or mixed with lemon extract or bits of veggies.

Then cut either cheese or thin sliced meats so they fit over the top of the bread and "smear" end to end without much "overflow". To make them look extra special, you can cut the meat or cheese to size before you put the cream cheese on, and cut shapes into the meat, so the cream cheese shows through, like a Lindser Tart.
