I heard you burn carbs before you start burning actual fat. How long does this process take before you burn fat?

If you have a diet high in simple carbs then they are the first thing to go, and fat stores stay put.
This is why diets like Atkins do cause loss of fat/weight. By avoiding sugar in all it's forms (high fructose corn syrup being the worst), stay away from all white stuff (bread, potato, rice, flour) you will start to burn the fat.
If you take even a short walk after meals (10-20 minutes) the glucose in your blood will be use up and fat burning will increase.

It depends on how in shape you are. If you are in great shape, then your body moves fat cells to your muscles, and you have to burn the fat there before you burn the fat anywhere else. If you are in poorer shape, then your body makes adrenaline, and you burn that first. While you are burning the adrenaline, your body works on moving fat cells to a place in your body where it can burn it faster than around your legs, or waist. But, all of this activity makes you tired very quickly, and that is why exercising is so hard if you are out of shape. But, it takes about fifteen or twenty minutes if you are out of shape, and only about five or ten if you are in shape.
