I think the biggest challenge that you face is finding the staff. You are going to have to find a small group of people who you can trust to handle large sums of money, but at the same time these people are willing to become a criminal in order to work for you.
I'd say such people are few and far between. Most criminals have a tendency to be dishonest and not particularly trustworthy, and that is going to be a killer when you are running an illegal casino operation. Most table games that the casinos operate have a house edge of 2-6% depending on the game. If you have staff stealing from you that house edge is not going to be enough. So then you have to get into rigging the games, which is not easy to do.
I'd say the easiest and less ambitions thing to do would be to buy a Texas Hold'em poker table and learn to deal. You could teach yourself by becoming a dealer at a local pub poker league. This will put you in touch with local poker players and get you used to dealing.
Then at a secret location set up your poker table and a nice chip set. Offer $100+$10 tournament style poker. If you get ten people to show up you can give $500 for first, $300 for second, and $200 for third. The $10 from each player is the entry fee. So for dealing one single table of poker you'd make $100. If you structure the blinds properly you should be able to make a game last less than 2 hours. So now you are making $50 per hour or more, which is not a bad income.
You can make extra money by having a friend sell beer or other drinks. If you can find some higher stakes players you could maybe do $150+$20, and make even more money.
The beauty of this concept is there is no cash on the table. It just looks like a friendly home game.
Unfortunately it just takes one vindictive player who gets upset over something to rat you out to the police and suddenly you find yourself getting busted. Most states would have a serious problem with you running a raked game like this, especially if the players were not all friends that knew each other.

It depends on your setting. If you want my true opinion, I don't think that setting up an illegal casino is the best idea, but its up to you. Think about your customers. Put yourself in their shoes, what would you like to see at a casino? Have games that EVERYONE can enjoy, not just a select number a people. Customers will stay as long as they are content and entertained. Have food too, people love to enjoy cocktails and small pick food when sitting and gambling. Don't be to cheap when setting your casino up. Remember to put yourself in your PAYING customers shoes (and they pay alright). Think of it that way.

First rent Boiler Room, the movie starts out with the lead actor running an illegal casino in his home. The move had Giovanni Ribisi watching a video camera. He had some teenager running the tables. He had to make his own poker chips so no one would bring in their own. Good Luck.
