Fresh Peach Crepes Filling
2 (8 ounce) packages cream cheese
1/2 cup granulated sugar
2 teaspoons vanilla extract
6 large ripe peaches
1/2 cup butter, softened
1/2 cup firmly packed light brown sugar
1 cup whipping cream
2 tablespoons powdered sugar
Beat the cheese, vanilla and sugar until smooth; add the vanilla and mix together.
Spread about 3 tablespoons of the mixture over the entire surface of each crepe.
Peel and slice the peaches; reserve a few slices to garnish each crepe.
Place peaches down the center of each crepe; dot with butter.
Sprinkle with 1 tablespoon brown sugar.
Roll up each crepe and place in a 13x9x2 baking dish; bake 8-10 minutes at 325ºF and top with the following topping: Combine the whipping cream and powdered sugar and beat until stiff peaks form.
Place the heated crepes on the serving dish and top with the whipped cream; garnish with the reserved peach slices and serve immediately.

My absolute favorite way to make a dessert crepe is to purchase some Nutella and fold it into whipped cream. You will get a wonderfully rich and creamy filling. Then after the crepes are rolled with the Nutella mixture inside I like to top them with sliced strawberries, toasted hazelnuts, & just a drizzle of warmed Nutella. The combination of ingredients provides just the right ratio of various textures. It's amazing!
Have fun with your friends!

There is a chocolate hazelnut spread called Nutella that is amazing on crepes. (You can add bananas or fresh strawberries with the Nutella also.) It is usually by the peanut butter or import aisle at the store. Another idea is to spread a thin layer of cream cheese and then a layer of jam (apricot or strawberry). Roll them up after either filling and enjoy.
