My dad has a cousin, who has a daughter. What is her relation to me?

If its your Dad's first cousin (his parent and their parent were siblings) then you and that daughter are second cousins.

your dads cousin is your second cousin and her/his daughter would be your third cousin

She is your second cousin. Someday when you and she both have children, your children will be third cousins to her children. Eventually your grandchildren will be fourth cousins to her grandchildren. You can carry this along as far as you want.
