I have noticed both canned and fresh new potatoes in the store. I was wondering if anyone has any creative recipes for the canned version?

make a garlic and herb butter sauce, stir it around with the potatoes. yumm.

Well, the gals have already beat me to the herbs & garlic, so I will give you an old "pantry" recipe which comes in handy when you have next to nothing fresh in the house...
In a bowl put:
tin of potatoes, cut into chunks
tin of peas,
hardcooked eggs, cooled & cut into chunks
salt & pepper & herbs of choice (tarragon is nice)
capers
then stir in mayo
Or, omit capers and add a tin of beetroot chunks at the end, not stirring too much or it all turns a yucky pink, but it still tastes really good!

Roast 'em in the oven with a little garlic and olive oil. They get nice and crispy! Mmmmm.

Drain them and heat them in the m/w with a little butter, and serve with a sprinkling of chives. (garlic chives if you prefer)
