SEA EAGLE'S FISH CASSEROLE

4 med. potatoes, cooked
3 med. onions, cooked
1 lb. or more fish (cod, haddock or pollock)
1/2 c. melted butter
Salt & pepper (opt.)
8 oz. sour cream
1 can cream of mushroom soup
1/2 c. bread crumbs
Paprika
1/2 lb. Velveeta cheese

Cook potatoes and onions in microwave for 12 minutes wrapped in plastic wrap with small air vent. NOTE: Cook potatoes and onions whole.
Slice potatoes and onions and lay on all sides of casserole, brush all with butter. Place fish fillets on bottom of casserole and sprinkle with salt and pepper. Mix sour cream and cream of mushroom soup, pour over all. Sprinkle on bread crumbs. Then, to add a little zip, cut up a 1/2 pound of Velveeta cheese and place on top. Sprinkle on paprika. Cook about 18 minutes on high in microwave, let set about 3 minutes. Serves 4 hungry people.

INGREDIENTS
2 tablespoons olive oil
1 medium onion, chopped
1 medium carrot, chopped
1 cup heavy cream or single cream
3 pounds potatoes, peeled and chopped
1 (8 ounce) package Cheddar cheese, shredded
1/4 cup chopped fresh parsley
2 (6 ounce) fillets cod or other white fish fillets, cut into 1-inch pieces
1/4 teaspoon hot chili powder
3 tablespoons milk
1 tablespoon butter
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
Place potatoes into a pot with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes. Drain and mash with milk and butter until smooth.
Heat oil in a large skillet over medium heat. Fry onion and carrots in the oil until starting to soften. Season with salt, pepper and chili powder. Stir in the cream and parsley, and remove from the heat.
Place fish in an even layer in the bottom of the prepared baking dish. Pour the cream and vegetable mixture over the fish, then cover with a layer of mashed potatoes. Sprinkle shredded cheese over the top.
Bake for 40 minutes in the preheated oven, or until piping hot throughout.

So a layer of diced pieces of potato. Then A layer of salmon, don't put too much. Put some penne pasta in it. Add some diced bell peppers and celery. Put Alfredo sauce on top. Sprinkle a lot of parmesean cheese on top and bake!

Layer of tomatoes and onions on the bottom, fish layer, cheese sauce layer, mashed potato layer, then do it all again. Top with grated cheese. Yummmm
