No I am not crazy jusy in a dilema.. I need to send a birthday cake to my husband which is in IRAQ .. One of his friends said send her the stuff and she would bake it using a little oven she has. the problem is they have no eggs at their disposal .. You think I could just bake it myself wrap it up tight and send the frosting to her t frost it for me?? What about the eggs in it will it make them sick?? It could take 5-6 days or longer to get to him.. PLEASE HELP IS there a cake mix i could use that doesnt have eggs or is there a substitute for eggs I could use in a cake.. THANKS

Honey - My son was in Iraq for over a year.......Most packages made it there okay. There are SO MANY restrictions.........
Using Flax Seed:
For each egg needed, place in blender:
1 heaping tablespoon of whole organic flax seed, blend until it becomes a fine meal. Add 1/4 cup cold water blend 2-3 minutes until thickened and has the consistency of eggs. Each 1/4 cup of Flax seed mixture will replace one egg in baking

Using Gelatin:
Before starting recipe for cookies, cake etc... Combine 1 tsp unflavored gelatin with 3 tblsp cold water and 2 tblsp plus 1 tsp boiling water. This mixture will substitute for 1 egg in a recipe.

Using Tofu:
Tofu is great for egg substitutions in recipes that call for a lot of egg (like quiches). To substitute for only one egg in a recipe, whip 1/4 cup tofu and add to your cooking.

1 whole egg = 2 tbsp water and 1 tbsp oil and 2 tsp baking powder.

To make one egg use 2 tbsp water and 2 tsp baking powder.

To make one egg white, dissolve 1 tblsp plain agar powder in 1 tblsp water. Whip, chill and whip again.

1 heaping tblsp soy powder and 2 tblsp water = 1 egg.

1 tblsp soy milk powder and 1 tblsp cornstarch and 2 tblsp water = 1 egg.

One average size banana = one egg, adds flavor to product. Product may be gummy.

1/4 cup soymilk in place of each egg.

3 tablespoons pureed fruit = 1 egg.

Substitute 3 tablespoons mayonnaise for each egg called for in a recipe.

1 egg white is 1 tablespoon of meringue powder plus 2 tablespoons warm water; 8-10 egg whites = 1 cup

1/4 teaspoon agar powder and 1/4 cup lukewarm water and 1 teaspoon low sodium baking powder . Whisk all ingredients together well before adding to recipe .

1/2 tablespoon agar flakes and 1/4 cup water and 1 teaspoon low sodium baking powder- In a large microwave safe container, combine water and agar with top on cook on high in microwave for 45 seconds. Carefully remove container from microwave and whisk baking powder into mixture. Use caution, the baking powder causes a rapid expansion of the liquid and has a tendency to foam over.

2 tablespoons liquid (room temperature water or milk or substitute) and 1 tablespoon potato starch or tapioca starch and 1 /2 tablespoon shortening and 3 /4 teaspoon low sodium baking powder.

1 tablespoon any mild flavored oil + 1 tablespoon apple cider or wine vinegar or lemon juice and 1 teaspoon low sodium baking powder and 1 teaspoon potato starch or cornstarch or arrowroot + enough carbonated water[plain soda water) to equal a total of 1 /4 cup . Combine all ingredients in a medium size bowl to allow room for the ingredients to increase in volume as baking soda and vinegar react. Whisk, then add per mix or recipe instructions.

1 tsp of arrowroot powder + 1 tsp of water, sometimes you may want to add a little extra milk or water or oil to make up for the bulk that you would get with a real egg. Good for pancakes and waffles.

As bad as this may sound 15 ml (0.51 oz) Vinegar = 1 egg. Mainly used in baking, products will stale quickly, use within four days. Freeze until used. Adds flavor to product. Product may be gummy.

1 tsp yeast dissolved in 1/4 cup warm water = 1 egg.

I believe there is a substitute called Egg Beaters, not sure of the destination time and it being in the cake and all. Perhaps you could send powdered eggs with the mix and the frosting and have it baked that way in her little oven.
I will pray for you that your husband has a speedy return from Iraq..

Many cake mixes are now including a no-fat or low-fat recipe version on the side of the box. These replace the egg with applesauce when making the batter.

You do not taste the apple sauce and the cake turns out pretty good. I had to make it this way for my Mom's birthday cake after her gall-bladder operation a few years back.

Chocolate cake do you??

Chocolate Cake


Ingredients:

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water (or ice coffee)
2 tsp vanilla extract
2 tsp vinegar

Preparation:

Preheat oven to 375°F (190°C). Use a small brownie size pan (no greasing required). Mix all the dry ingredients right in pan. Mix all the wet ingredients in separate bowl except the vinegar (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add the vinegar quickly and stir in — immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.

Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand)

richmond girl has it right. however you can exclude the bowl. mix dry ingredients in baking pan, make a small, med & large hole in the flour mixture. in the small hole-vanilla; in the med hole-vinegar; large hole-oil. pour the water over the top, mix well & bake. do not let the vinegar scare you. this cake (called wacky cake, when i was growing up) is sweet, moist & doesn't even need frosting to satisfy.

Sending a regular cake won't make him sick. It might be a little stale by the time it gets there, but it won't be bad or anything. Wrapped properly, it'll be fine.

Absolutely.

Cake mix, plus one 15-ounce canned pumpkin (not pumpkin pie mix, just plain canned pumpkin) and about 1/4 cup of water.

I make these all the time. Moist and delicious with fiber and no added fat!

Is it possible to even send food that has not been packaged? I don't think it is. You should just buy him a prepackaged cake to be safe. I know thats not very romantic or whatever but no one wants a rotten cake right.

if you DO send the eggs, wrap them up very tight and send them with dry ice.

wow i know the perfect answer i can't eat eggs so when i make cake i use yogurt. sounds bad but it works.
