There's also an MMORPG called "Nine Dragons" that has different clans like Wu tang, Shaolin and beggars fighting against one another in a player versus player setting, the animation actions looks pretty good too, but tends to resemble the high wire Jet Li movies more than realistic fighting. The only downside is that you need to do grinds to level up your character like they do in the World of Warcraft.

I consider True Crime: Streets of LA as martial arts since Russell Wong is the main character and the main villian is an ancient Chinese man.

Jade Empire's great. I also like some of the Samurai games out.

I highly recommend Jade Empire.
Another popular one, although a bit old, is Shenmue.
