The Bible actually doesn't say that God will never give you more stress than you can endure. People often say, "Well, if God gave you that to handle, he must know that you're strong enough to take it." That is a misunderstanding of Scripture. They are applying I Corinthians 10:13, which speaks specifically about "temptation" to all forms of trouble.
Paul speaks to other forms of trouble in 2 Corinthians 12:9: "But he said to me, 'My grace is sufficient for you, for my power is made perfect in weakness.' Therefore I will boast all the more gladly about my weaknesses, so that Christ's power may rest on me."
God doesn't just give us what we can handle, but handles it for us by his power and strength. He can give us way more than we could ever handle, but we need to rely on him to take care of it for us.

Paul tells us: "God is faithful, and he will not let you be tested beyond your strength but with your testing he will also provide the way out so that you may be able to endure it" (1 Corinthians 10:13). Over time that promise has become abbreviated to "God will never give you more than you can handle." Like many others, I've derived comfort from these words, though I know God does not "give" me loss, pain and grief.
