Honestly, I think it's impossible to tell. Mainly because you never know how much of something is being exaggerated by the celebrity for the sake of PR, or by the tabloids for the sake of shock value.
But Christianity is obviously not the only monotheistic religion, so there have certainly been celebrities who converted from Christianity but still "worship God". Celebrities who were raised Christian but converted to Islam, like Muhammad Ali, are some examples. And it sounds smug to say that those who convert out of YOUR religion are "backsliding", because people can say the same about those who leave their own religion for Christianity.
As for those who more specifically left Christianity and additionally became atheists, I can think of a few: George Carlin, Julia Sweeny, Kurt Vonnegut Jr., Jack Nicholson, Penn & Teller, Dick Cavett, Alan Cumming, Larry Flynt...
