My boyfriend is working until early afternoon tomorrow.
I'd figure I'd surprise him when he gets home and have a romantic lunch set up for the two of us. He's been working so hard recently, and is so down that all he can do is work-work-work then come home and pass out. So I got champage, I got a date like outfit picked up, even lightly scented candles, and a CD of his favorite jazz music.
But what should I made that isn't too heavy, yet romantic for a surprise lunch for two? Include recipes if possible. =)

A zucchini frittata, served either warm or cool is an impressive looking dish that makes a wonderful lunch for two. Cut the frittata into wedges, and for a light lunch, serve with a fruit salad and a chilled bottle of Chardonnay.
2 tablespoons olive oil
1 clove garlic, minced
½ lb zucchini, sliced into 1/8-inch rounds
4 eggs
2 tablespoons milk
¼ teaspoon dried oregano and salt
Dash of pepper
1½ tablespoons grated Parmesan cheese
¼ cup green onions, sliced
½ small can (2 1/4 ounce can) of sliced ripe olives, drained
In a small frying pan with an oven-proof handle, heat 1 tablespoon of olive oil over medium-high heat. When oil is hot, add garlic and zucchini; cook, stirring occasionally, until zucchini is tender. Remove from heat. In a bowl, lightly beat eggs and milk. Stir in oregano, salt, pepper, cheese, onions, olives, and zucchini mixture. Add the remaining tablespoon of olive oil to pan; place over medium heat. When oil is hot, pour in egg mixture and cook without stirring. As egg mixture begins to set, lift edges with a spatula and tilt pan to allow uncooked egg to flow underneath. Continue cooking until eggs are softly set, and the top still looks moist. Remove from heat. Place under broiler about 6-inches from heat, just until tops of eggs are set (about 2 to 3 minutes). Cut into wedges to serve.

parmesan crusted chicken (1/4 inch thick)
steamed veggies w/ white cheese sauce
italian bread
wine is up to you...... I actually like this with a reisling. Edit- your bubbly will work great with this because it is so light for a meal.
Unless you are planning to spend all day on this, I recommend that some of the things you buy instead of make.... including the bread.....
I have done this both ways and while making it all from scratch is wonderfull, it will take you several hours to complete. Using premade on some of it is a lot easier and quite frankly.....he he..... isn't enough of a difference to merrit the extra time making it homemade.
Depending on time this can be done either all homemade or some ingredients can be bought premade./ (white sauce and pesto)
This is my favorite chicken recipe.... it is light and always comes out perfect.... easy too.
I usually top it with a spoonfull of pesto....(can be bought premade)

I would consider serving it with either steemed broccoli and cauliflower, or steamed asparagus with a white sauce,(bertolli makes a good alfredo that will work fine/ just add some shreaded romano and parmesan cheese in it when you heat it in a saucepan)

SICILIAN PASTA PESTO SALAD
2 lbs. ziti, penne, or other pasta, cooked
Pesto Sauce:
2 cups fresh basil leaves, chopped
1/2 cup walnut or pine nuts (optional)
4-6 large cloves garlic, minced or pressed
1 cup olive oil
1 1/4 cups grated Parmesan cheese
3-4 anchovies, blended (optional)
1/4 teaspoon crushed red pepper flakes
dash of black pepper
salt to taste
Place the olive oil into a small saucepan add the garlic, red pepper, grated imported Parmesan cheese and herbs and spices. Crush the anchovies into the oil until blended. Bring to a simmer for 1 minute and immediately remove from heat.
Pour this mixture over cooked hot pasta, stir well, and serve with bruschetta.

Well, definately his favorite meal would be the most romantic. A way to a man's heart is through his stomach. However, if that is not possible, I would say Italian food is the most romantic for me, like Spaghetti and meat sauce, salad and garlic toast. You could eat from one plate, work on one noodle together and meet in the middle. Have fun with it.
I would think that he may not be too interested in the meal as much as he would be the desert, anyways. Serve strawberries and whip cream. That is always tasty, if you get the message. ; )

For dessert try fresh strawberries and blueberries with chilled cream. The berries will compliment the champagne nicely!
1 pint strawberries (or raspberries-which ever you like!)
1 pint blueberries
1 carton (small) heavy whipping cream
1 tsp sugar
Slice the strawberries length wise, put in bowl, add blueberries. Chill for 2 hours
Whip cream and sugar by hand for 3 minutes until thickened.
Serve in chilled cups and put cream on it just before serving.

i dont know that it matters i find it romantic and sexy that you would even make the effort this shows how much you care maybe after lunch give him a back rub

I would try a good sandwich like a BLT with avacados and sprouts (if he likes those)...with good bread, find it at a specialty store.
