I have been trying to make ice cream with an ice cube filled motorized maker. I use 50% heavy cream, 50% 1/2&1/2 with vanilla and 1 cup of sugar. My ice cream never hardens to a soft cream that is should, why?

Make sure the mixture is well chilled before you put it in the mixing container. It will also help to chill the container berfore hand. Use crushed ice instead of cubes from a tray, because the smaller chunks of ice make better contact with the container.

The two main tricks are using the right amount of salt, and hardening the ice cream in the freezer for several hours before serving. Ice cream straight out of the churn is more like a soft-serve product.
Some tips:
- Crushed ice works better than cubes. The more finely crushed, the better
- Cool your ice cream mixture in the refrigerator before putting it into the churn, especially if using a cooked mixture
- Add salt to ice in a proportion of about 1lb. salt per 10 lb. ice. Adding more salt than this will lower the temperature further, but too much salt will tend to produce an ice-crystal texture, rather than a smoothe texture. So try the 1/10 ratio first.
- As you pack the ice into the ice-cream maker, add some ice, some salt, another layer of ice, some more salt, etc. until filled. Rather than adding all the ice and poring the salt on top.
- The ice-cream produced by the maker will not be hard straight out of the ice cream maker. It should be more like a firm soft-serve ice cream. When it reaches this stage, quickly scoop the ice cream out of the churn into a bowl, cover with plastic and put into the freezer to harden for several hours. Depending on the design of your ice cream churn, you may also be able to put the churn's ice cream canister directly into the freezer, rather than transfering to a bowl.

Mike is right, your not cold enough. Keep the container completely covered with ice but remember, layer of ice sprinkle well with ROCK SALT and repeat as the ice melts until frozen.

Have you been putting salt in with the ice? salt water gets colder than fresh water.
