I went to america several years ago and ate at the waffle house several times and loved their hash browns, but i can't find a recipe for them and the hash browns in the UK are not in any way the same. Does anyone have a recipe for real american hash browns.

The secret to hash browns is cooking them twice, just like French fries. First in water, then frying.

First, peel and shred the potatoes (russests are best), then put them in a sauce pan and cover with water. Bring the water to a boil, lower the heat and gently simmer them until they're tender.

Drain them well and gently pat them dry with paper towels.

Melt some butter in a skillet, add the potatoes and season as you like. Cook the potatoes on one side until they're golden brown then turn them and brown them on the other side.

I'm ammending my post to give you a link below to a site that has recipes that claim to be "real" Waffle House hash browns. Both the traditional and the "Scattered all the way". I haven't tried them, so I can't comment on what they taste like.

To make real hash browns you need a grater, plastic wrap, starchy potatoes, real butter, and paper towels. You will also need a large skillet, a baking sheet, and cooking oil.
Start by peeling the raw starchy potatoes, then on the medium size holes of the grater, grate the potatoes. It is a good idea to do this over a bowl. Once you have grated a few cups. Take a hand full and place it a paper towel. Now over the sink squeeze the paper towel. You should see a starchy liquid come out. Once you have squeezed the potatoes a few times, place them on a piece of plastic wrap, and repeat the process until all the potatoes have had the excess water removed. To cook: place a table spoon of butter in the pan with a a table spoon of cooking oil. Heat over medium heat. Add potatoes once pan is hot. You should add the potatoes in batches not over fill the pan. Allow potatoes to cook 3-5 minutes or until golden brown. Flip them over and continue cooking on the other side. (When you flip them you can add cheese, tomatoes or whatever else you like on your hash browns.) If your pan was not large enough to do the entire batch, take the finished potatoes out of the pan and on to a cookie sheet. Place them in a 200 degree oven while you finish the remaining potatoes.
A great short cut to this is a product called "Simply Potatoes" which makes hashbrowns, and all you have to do is cook them up.

Peel and wash a whole potato.
Use a grater and grate the potato into shreds.
While grating heat some oil in the bottom of a skillet at medium high heat.
After the potatoes are grated place them in cold water for about 5 minutes. Drain the water from the potatoes making sure that none lingers. (Soaking in cold water for a few minutes ensures a crispier potato....you can skip this step, but the potatoes will be softer.)
Place the drained potatoes into the skillet and spread out over the pan. Turn them over every few minutes until they are golden brown on both sides.
They won't taste like Waffle House because their hashbrowns are frozen and prepackaged, but they are delicious. I have been making them since I was a teenager and now I make them for my family....they love them.

Ingredients


- 1 (26 oz) package frozen shredded hash browns
- 1/2 cup butter
- 2 pounds sausage (I use RB Rice tube style)
- 2 cups shredded cheddar cheese
- 2 cups mozzarella cheese
- 10 eggs
- 1 cup milk
- 1/2 tsp seasoned salt

Instructions


1) Thaw hash browns and place in 9X13 pan. Melt butter and pour over hash browns. Bake at 425 for 25 minutes.


2) Place cooked, drained sausage over hash browns. Sprinkle cheeses on top (at this point you may refrigerate overnight before cooking).


3) Beat eggs, milk and salt. Pour over cheese. Bake at 350 for 40-45 minutes. Cooking time will need to be longer if it has been refrigerated. (If cold an hour to 1:10)



Its faster and easier to buy a bag of frozen hash browns and make a Delicious casserole!!!!!!!

Partially cook potatoes-boil, bake or nuke. Shred them with a box shredder(like you use for hard cheese)with a little onion if desired and place in a mound in hot oil or butter until crispy outside and still soft in the middle. Hope that helps-it's the only way I know to do it.

I've tried some recipies for hash browns and found that the ones out of a packet whilst not great are better. (I'm not a rubbish cook btw)

You just use grated potato, a little chopped onion, salt and pepper to taste and you cook it the same way you brown "bubble & squeak" You just keep flipping and browning it till it's brown throughout and holds it form.
It's that easy.
