In my opinion, Wrestling is the oldest. According to archeologists, the ancient civilization of Sumeria has existed around 5 to 6 thousand years ago, and was the oldest civilization with a recorded history in existence. And in the Sumerian epic of "Gilgamesh", the ancient Sumerian king of Kish is said to have won a wrestling match against a half man half creature named Enkidu who later became his best friend. The Chinese civilization has been thought to start about a thousand years after the Sumerians came to exist.

I would say it's a toss up between kung fu, and wrestling. Wrestilng has been around since, as you mentioned, the Romans and Egyptians. Kung fu has been around since the Dynasty wars, perhaps earlier than that. Boxing is nowhere near that age.

Wrestling is older. The Bodhidharma created Kung Fu, which is documentably more recent than ancient Greek Olympic wrestling. (Of course, old Wrestling looked more like today's UFC, with gouges, hair pulling, biting and punching)
