It is very rude to say "eewww!"
If it's a standing-around-snacking thing, just say "No, thank you."
It someone is serving you dinner, remind yourself that eating something you don't really like isn't going to kill you. Eat it to be polite and not because you think it's the tastiest thing on the table. (Dietary laws and allergies excepted of course.)

unless there is no way I could swallow it I would eat it so not to offend the cook. I have politely moved stuff around on my plate to make it look like I am eating and no one has said anything about me not eating and when they ask why I did not finish I politely say I was not all that hungry.

Just say it as you mean it and they will understand. But say it in a nice way like I am not hungry or you can test little bit and say it’s ok and politely refuse it.

Politely refuse, don't say you hate the food or worse, say "Eew". That's insulting. My belief is that, it's better to not take food you don't intend to eat than put it to waste by taking it and not eating it.

No matter what it is, you eat it no questions asked. If it is offered to you, you should accept it no matter what. Eat it so you won't offend them. I went to Fiji a couple of years ago and they served something called "lovo". It tasted weird, but I still ate it because they took great time preparing it for us & because they were very proud of it.
