I like Healing with Whole Foods by Paul Pitchford and allrecipes.com. The recipes on allrecipes.com include nutritional information (calories, fat, etc) and members give their feedback on the recipes. good luck.

There is a set of books "Borders at Home" put out by Borders Book Store, they have three cook books which all have good meals in them. (titles Family Meals, Healthy Meals, and Quick Meals). Also, there is a book titled "High Fiber, High Flavor" by Rosemary Moon. Which has good healthy recipes in it.
Another idea... try your local library, they are bound to have some good healthy recipe books.

As for the veggie problem, I think what would be best is to experiment with different vegetable and a variety of ways to serve them. Then once they'll eat some of them, then you can slip in the other (that they don't like) once or twice a week. Eventually they'll either grow to not mind them as much or learn to tolerate them.

Enjoy your efforts to eat healthy!! I started about a year ago and I love it. It took a little while to get used to, but I'd never go back. I'm really excited for you!

P.S. Salads are wonderful!! very healthy and you can let your imagination go wild. Try adding different veggies (carrots, onions, broccoli, celery, olives, you name it), or different meats (chicken, beef, fish, ham, turkey) and don't forget the toppings(apples, craisins, nuts, croutons, dressings). Wow! now I'm getting really excited!! think of all the possibilities. The hardest part of making a salad is deciding what to put in it. enjoy!!

1. If you don't have a slow cooker or crock pot, you might want to pick one up: It makes cooking a lot easier to do when you are busy.

2. Try to find a recipe site you like online. I use www.allrecipes.com because the users comment about what worked and what did not, and because they have lots and lots and lots of ideas and recipes.

3. Go online and check out the sites of your grocery stores. Meijers and Krogers and such will post their adds online by zip code-
so you can plan out a whole week of meals and plan your shopping before you leave the house.

4. Start small and forgive yourself. It takes practice and patience to cook well. And sometimes you are just to tired to do much beyond some mac and cheese.
