I buy plenty of sliced ham and turkey from my deli and it's fine to keep them in your fridge for at least 5 days. You can tell that they're not good anymore if they are slightly discolored, or smell.

Sliced in the store deli: no more than 2 days

Bought pre-sliced: a week, unless the meat is smoked, then I'd give it 2 weeks.

You should keep any meat in the fridge for a maximum of two weeks. Any longer and you're just asking for food poisoning. You can tell if meat is rotten by its appearance and smell. If the meat smells really nasty and unappetizing, chuck it. If it's off color and moldy, by all means, throw it out!
