One of my friends is a really conservative Christian right sort of guy, and I don't know if I email him and sign it Peace, Jeremy if that would offend him

Yes, I think it would be a very good idea to sign by saying peace.

If he is a friend, you should be able to sign it anyway you like and "not" offend him. Those on the right are not warmongers, nor are they deranged. There is nothing wrong with wanting peace or wishing peace on a friend. On the other hand, if it offends him, and he is a true friend, he'll simply tell you that it bothers him and you can stop using that ending to your emails.

We say, as Christ did, "Peace be with you!' in part of the service. I don't know about your friend,but why oh why would anyone be offended by the word, peace?

Being conservative doesn't mean that you are against peace. Yes, it is fine to sign it that way.
