if the stuffing is red, it's a pimiento, and done by machine.
if it's white, it's either garlic, an almond, blue cheese, or onion, and usually those are done by hand, esp. of large olives.

Not sure how they styuff them, but they are sooooooooo nice. Stuffed with a little feta and garlic or pimento. Fresh from th deli is best but jarred are good, I try not to by them too often as I could quite easily sit and eat a full tub. Weird that, 5 years ago I hated olives, now they are one if my favourite snacks; plain pitted green olives are my favourite in a little garlic olive oil.

They are usually stuffed with pieces of pimento, a small, sweet red pepper. Mass producers use machinery. There are small suppliers that do specialty olives and they do it by hand. I've had them stuffed with tiny cocktail onions, cloves of garlic, pieces of lemon, and almonds. All of them were very good, especially with the almond.

Pimento or some are stuffed with anchovies. Don't know how they do it though.

i would think by machine...i like them stuffed with feta cheese..bitter, but tasty!
