When I had to act all nice to rude people or people I hated and had to plaster a smile on my face and be nice even though I wanted to tell them what an a** they were being.

Keeping calm when people are being truly idiotic and I just want to smack them. I was once waiting tables on the shift between lunch and dinner. It was just me and the bartender, because we usually got maybe two or three tables over the course of four hours. However, that day we got completely slammed. The restaurant filled up. In the middle of this, I had to stop what I was doing to listen to two idiots tell me how much I sucked at waiting tables because, among other things, I didn't fill their drinks- the bartender did. Also, there was no silverware already on the table, although I did get that for them right away. I was then told that the plate sharing fee, which was clearly printed in the menu, would be taken out of my tip. Stupid, self-absorbed people.

The customers themselves. Sometimes they just don't know what they want. The second (more like 1A) is complete misunderstanding. Sometimes it's the customers fault, sometimes it's the service persons fault. One of the jobs (and I know this is tough) of personal service is finding a common ground before things get out of hand.

When people start off being jerks without provocation. It makes it really difficult to be pleasant to them. It is also difficult to give great service when the person insults you directly or yell at you. Hard to bite your tongue!

lovingclementine is right. People think they're the most important person in the place and are always looking for something for nothing. The vast majority of people have no consideration for anyone else.
That said-there are a lot of people behind a counter who shouldn't be there.

The most difficult to me, is having to be nice, no matter how rude, demanding, demeaning, unreasonable a customer is, you have to remain positive, cheery and act like you give a damn!

The feeling some people have of "absurd entitlement". For example, the lady ahead of me in line at the bagel hut ordered a poppy bagle - they ran out of poppy bagels and offered to give her a free bagel of her choice - she DEMANDED that they give her the entire meal for free - Crazy!

+ People that stay on their cell phones for the entire transaction

+ I hate to say it but people that don't speak English and get angry at me when they don't understand something I'm saying to them and start yelling at me

+ People that ask why I charged sales tax, as if I have any control over that whatsoever

+ People that yell at me about how they can't pay their bill in the store and how they did it last month when we've NEVER accepted payment in store...

+ When you very politely say that the store will be closing in five minutes and if they need help with any final purchases to please ask for help and then they proceed to shop for another thirty minutes

when people are as rude to me no matter how nice i am to them
when people think that we should have everything they ask for and that they should be able to afford whatever we sell them
when they can get free stuff even though i cant
that their order will be ready as soon as they get there no matter how busy we get
i could go on and on but i wont
