Two Options:
1. Cut the recipe in half: 1 cup bisquick, 1 cup milk, 1 egg
2. Make the whole recipe and refrigerate the batter you don't use so it's all ready for you the next time you want pancakes. The batter should keep 2-3 days in the 'fridge.

Whenever you make something you can make the recipe bigger by doubling it or by cutting the recipe in half. Here is what you do:
1 cup original Bisquick
1/2 cup Milk
1 Egg
That will make seven or you can make as many as you can eat and put the rest in the refrigerate for up to a week.

Just a comment that I've noticed that I never get nearly as many pancakes as it says on those recipes. If you really want spectacular pancakes, that take a bit of planning ahead, try my husband's favorite, "Western-style," from the Canadian author, W.O. Or for something a bit different, and we love them, Dutch Pancakes ... for 1 serving ...
1/2 c. flour
1/2 c. milk
2 eggs, lightly beaten
4 tbsp. butter
(Fresh lemon, powdered sugar)
Preheat oven to 425 degrees. Mix ingredients lightly. Melt butter in pan. Pour in batter. Bake 15 to 20 minutes. Remove and sprinkle with powdered sugar and fresh lemon juice.

You most certainly can cut down on this recipe, but better yet--make the whole recipe, put the extra ones in a zip lock bag, press out the air and put in the freezer. You can then warm them in the toaster, toaster oven or in the microwave. They can be kept in the freezer for about two-three weeks.

Yes, cut it in half... should be fine.
But may I recommend adding a tsp of sugar and a teeny splash of vanilla extract to the batter?
Also, if you do make a whole batch, you can freeze the extras and run them in the toaster oven or nuker for a quick breakfast another day!
