Easy as hell chicken Marsala:
2 boneless skinless chicken breasts
olive oil
flour
pepper
oregano
parsley
marsala cooking wine
Pound chicken breasts really flat between some sheets of plastic wrap or equivalent. Mix together about 1/2 cup flour, a tablespoon black pepper, and a tablespoon of oregano and dredge the chicken in the mixture, coating each side. Heat 1 tablespoon olive oil on medium heat, then sautee chicken for 4 minutes per side. While chicken is cooking, slice mushrooms (5 or 6). Add these to the sides of the pan around the chicken, top each breast with a pinch of parsley, then add a cup of marsala cooking wine to the pan. Allow the liquid to reduce by about 1/2 (4-6 minutes). Remove chicken and top with the mushrooms and sauce in the pan. You can make this in about 15 minutes easily.
Per serving: Roughly 275-300 calories for a 6 oz. breast, 35 g. protein, 3 grams fat, and 25 grams carbohydrates (just in case you're interested)

If you two are a bit experimental, I would recommend falafel.
It's a Mediterranean dish that only takes about 20 minutes to prepare. It's crunchy, creamy, soft, tasty and healthy!
You go to a grocery store and buy the mix, a package of pita bread, some sour cream (or unflavored yogurt for a more authentic experience), and some vegetables (I prefer red onions, tomatoes, and cucumbers).
First you make the sauce. In a bowl, just mix the sour cream/yogurt, a little salt and pepper, and your veggies and mix well. Then you combine the falafel mix and water as the box instructs. Let the mix sit for five minutes (but not longer) and then roll it into small patties (just a few inches around).
Fry them in a small amount of olive oil, and serve them inside the pita bread and topped with the sauce.
Quick to make, quick to clean up, and definitely a break from the ordinary!

CHICKEN KIEV
Soften:
1/2 pound good quality butter
Add to this:
3 cloves minced garlic
1/4 cup minced fresh parsley
salt and pepper
Refrigerate this until firm enough to cut in chunks.
Pound 8 pieces of boned chicken breasts with the flat side of a meat mallet. Freezer storage plastic bags are great for this since they are durable.
Place chicken breasts inside the plastic bag and pound thinly to about 1/4 inch thick.
Fill with butter mixture and roll as you would for stuffed cabbage. Be careful to overlap and completely enclose the butter. Chicken will be sticky and you can seal the edges by pressing them with your fingers, pinching to close.
Beat together:
4 egg whites
2 tablespoons milk
Roll stuffed chicken pieces in bread crumbs, egg mixture, then crumbs again.
Coat well and refrigerate for at least 20 minutes or until you are ready to deep fry.
Use corn or vegetable oil and do not get the oil at about 350-360°F 8-10 minutes. Fry until golden brown but not crisp. Drain on paper towels. Do not over cook.

Get frozen spinach in a pan and mix it with feta cheese and a little garlic.
Place on the chicken breasts for the last 30 mins.

EASY LASAGNA
1 lb. ground beef
3 1/2 c. (32 oz.) thick spaghetti sauce
1 1/2 c. water
2 c. (15 oz.) Ricotta cheese
3 c. (15 oz.) shredded Mozzarella
1/2 c. grated Parmesan cheese
2 eggs
1/4 tsp. salt
1/4 tsp. pepper
8 oz. lasagna, uncooked
Brown beef in 3-quart saucepan; drain off excess fat. Add sauce and water; simmer about 10 minutes. Combine remaining ingredients, except lasagna, for filling. Pour about 1 cup sauce on bottom of 9x13x2-inch baking pan.
Layer 3 pieces of uncooked lasagna over sauce; cover with about 1 1/2 cups sauce. Spread half of cheese filling over sauce. Repeat layers of lasagna, sauce and cheese filling. Top with layer of lasagna and remaining sauce. Cover with aluminum foil and bake at 350 degrees for 50-60 minutes. Remove foil; bake about 10 minutes longer. Allow to stand 10 minutes before cutting

fettuccine Alfredo, salad, bread.
have all your supplies at hand and ready to go and this will be very easy.
bring 1/2- 1c cream to boil& reduce to the desired consistency, season w/ s&white pepper& generous amounts of grated parmesan cheese& finish w/ butter
now to that add some precooked and still warm pasta& toss.
plate that while still hot& top w/more cheese&chopped parsley. serve w/ salad and bread, and a glass of wine would be nice. good luck

Don't know what he is into but my husband loves when i make him lemon pepper chicken with white rice and also i love to make steaks with shrimp ka bobs with a side of mash potatoes and a corn on da cob

How about veggie kabobs cooked on the grill. Take any kind of veggies you like, put them on skewers, brush with olive oil and sprinkle with fresh or dried herbs such as rosemary, thyme, oregano and basil. Grill until tender.

rice with canned tomatoes and put porkchops with garlic & parmeson over top. sprinkle with some cheddar cheese or some velveeta crumbles
OR
make a meatloaf , flatten it out put ham & cheese on top and roll it up like a log!!!
