The original Toll House Chocolate Chip Cookie Recipe
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks, 1/2 pound) butter, softened
3/4 cup granulated [white] sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups (12-ounce package) Milk Chocolate Chocolate Morsels (Hershey's or Nestle's)
1 cup chopped almonds or walnuts

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE in preheated 375-degree [Fahrenheit] oven for 9 to 11 minutes or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
PAN COOKIE VARIATION: PREPARE dough as above. Spread into greased 15"x10" jelly-roll pan. Bake in preheated 375-degree [Fahrenheit] oven for 20 to 25 minutes or until golden brown. Cool in pan on wire rack.
FOR HIGH ALTITUDE BAKING (>5,200 feet): INCREASE flour to 2 1/2 cups; add 2 teaspoonfuls water with flour; reduce both granulated sugar and brown sugar to 2/3 cup each. Bake at 375 degrees Fahrenheit, drop cookies for 8 to 10 minutes and pan cookies for 17 to 19 minutes

Chocolate Chip Cheesecake Cookie Bars
Buy the cookie dough mix or make your own, use a stick of cream cheese w/ an egg and 2 Tbsp. sugar. Use half the dough to line the bottom of an 8" square pan, followed by the cheesecake mixture, then the remaining half of cookie dough on top. Bake at 425 for 25-30 minutes. Then refrigerate until serving time. They are a big hit anytime I make them. Try using different cookie doughs for different occasions. Enjoy!

Classic Peanut Butter Cookies

INGREDIENTS:
1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 eggs 2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda
DIRECTIONS:
1. Cream together butter, peanut butter and sugars. Beat in eggs.
2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

Ok, here is my best recipe for chocolate chip cookies. My kids love them and their friends used to beg me to make them for school parties....it's a long recipe, but here goes.....
Put your shoes on...and carry an umbrella, cause it looks like it may rain. Head to the nearest grocery store. You can go by car, bus, taxi, or walk, just get there. Once you are in the store go to the aisle that says freezer....and start looking for the Pilsbury cookie dough. After you have purchased it, take it home and follow baking instructions....Remember to smile and think of your family fondly while doing so, cause that is how you make them special. Enjoy!

QUICK AND EASY COOKIE
1 box cake mix
2 c. Cool Whip
1 egg
Mix together well. Drop by spoonful on greased cookie sheet and bake at 350 degrees for 15 minutes. Yield: 4 dozen cookies. Quick and easy and delicious.

Peanut Butter:
Ingredients:
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/4 cups flour

1/2 teaspoon salt
Directions:
Cream butter, peanut butter and sugars. Add egg, and continue to beat until light and fluffy.

Shape into balls and place 2 inches apart on ungreased cookie sheet. Flatten the balls with a fork. Bake at 300 degrees F. for 18 to 24 minutes.
Cinnamon Sugar Cookie:
Ingredients:
1 cup sour cream
2 cups sugar
1 cup shortening
4 eggs
1 teaspoon vanilla
6 cups flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup cinnamon sugar
Directions:
Preheat oven to 350 degrees F.
Combine sour cream, sugar, shortening, eggs and vanilla. Mix well.
Slowly add the dry ingredients until everything is completely mixed together. Let the dough chill for about 15 minutes.
Form dough into small balls and roll in cinnamon sugar.
Bake until LIGHT golden brown - no more than 10 minutes. When you take them out of the oven they may seem underdone, but they aren't. Just let them cool on the pan and you will find that they are perfectly soft and moist. If you prefer cookies that are a little harder and more crumbly, bake them longer.
No-bake chocolate cookies:
Ingredients:
3 cups rolled oats
1 cup coconut
1/2 cup cocoa
1/2 teaspoon salt
2 cups sugar
1/2 cup milk
1/2 cup butter
1 teaspoon vanilla
Directions:
Mix rolled oats, coconut, cocoa and salt together in a large bowl. Set aside.
Mix sugar, milk and butter together in a saucepan and bring to a boil. Boil for 2 minutes.
Remove from heat and stir in vanilla. Add dry ingredients and mix.
Drop by teaspoons onto wax paper and let cool.
All of these are fantastic!!!

1 roll store-bought peanut butter cookie dough
1 package mini reese's peanut butter cups
2 racks mini muffin tins
quarter the cookie dough per the directions on the roll. drop one quarter round in each muffin cup. bake per directions. while baking, peel the wrappers off all the mini reese's peanut butter cups.
as soon as you remove the cookies from the oven, drop a reese's in each and press down slightly. allow to completely cool before removing from the muffin tins.
absolutely yummy! my daughter makes these for her grandfather at Christmas and he will not even share they are so good.
