Without more details (including an example), it's difficult to answer. But I suspect you're confused as to why we believe the commandments given to Moses (the Mosaic Covenant) don't apply to Christians. Briefly, this is because the New Covenant brought by Jesus rendered the Mosaic Covenant inoperative in our lives. See Jeremiah 31:31-34 for proof that God promised a New Covenant.

Because some things applied to a specific time frame for a specific reason, and those reasons are clear... other things that carried over apply for all times, and those things are clear as well. In either case there are verses to substantiate the "fundies" perspective.
Isn't this a rather obvious answer? Do you not think times have changed?

I've never met a fundie who was a strict bible constructionist, as you call them.

Every single one of them is just busting at the seams with non-biblical, and anti-biblical beliefs.

Someone told me because that God would know that times would change and the guidelines in the Bilbe would withstand the test of times. I think that the guideline were subject to interpretation of the times that we are living in because I am not sure that Christians should go out and stone people that break the sabbath(Saturday).

Each denomination thinks different. Catholics, Baptist, Protestant, Jehovah Witness are all Christian and yet they don't agree on different issues. For example, Jehovah Witness don't agree that there is a trinity. Baptist seem to read the bible a bit more literal than others. Catholic seem to base more on traditions. They are all Christian because they believe in Jesus Christ but they are still different in their interpretations.

Fundies really annoy me despite being my fellow Christians, they refuse to call me a Christian (I am a Catholic), they then heavily criticize us for not being biblical literalists, then when it comes to the Eucharist they say "O it was just a symbol" yet think that events which are obviously symbolic should be taken literally. They pick and choose what they want to take as literal.

It's simple:
Times change.
People change.
Society changes.
Our level of knowledge changes.

Life on Earth is all about change.

God's Word, however, never changes because God Himself does not change. .
