In my experience, Te black lab is the best hunting dog. They can be used for upland game birds, maybe not as effectively as the spaniels, etc. but they are also the best waterbird hunting dogs. Another advantage to the black lab is the fact that they are great pets, good around kids, including small ones and very protective of their family's.

Spaniels are the way to go. My sister breeds Brittany spaniels. http://www.geocities.com/internest2000/royalbrittanyshome.html
I own English Springer Spaniels and I must say I have been amazed over the years. He will effectively hunt, squirrel, coons, any type of bird "water or woodland", and deer.
He will run all day long and do anything I ask of him. He once followed a blood trail for over a mile in the tall grass while it was raining, amazing.
just make sure not to get the "show" breed. Their fur is far to long and their stamina is weak.

"Most Versatile Hunting Dog"
Thats a title many have debated for quite some time. a GSP or Brittany are both good choices - I'd prefer the smaller Brittany myself, but believe a GSP, due to its size is probably the better pure hunting dog.
Your best bet would be to check out http://www.navhda.org/ and maybe go see a few Natural Ability hunt test in your area. Talk to owners and breeders and see what you like.
I think really your question is "What is the Best Versatile Hunting dog for Me?" and only time, research and experience will answer that question.

Depends on what you want to hunt. I have had several including spaniels and pointers but believe it or not the best hunting dog I have ever had is a beagle/jack russel mix. He has the hunting skill of the beagle mixed with the agility of the jack russel. My only frustration is that he has a habit of pulling birds out of the air and actually catching squirrels BEFORE I get to shoot them....lol

Black Lab as long as you take care of its hips it can point and it can retrieve waterfowl. If you cool down your labs legs and hip they will last alot longer. Just buy one of the cheap massagers and run it over the legs and hips. It worked wonders for my lab.
