i'd have a salad bar,noodles,sauce,and maybe kfc
for dessert serve ice cream,vanilla and chocolate and keylime pie or blueberry pie

Stick to something simple and that will refrigerate well.
Homemade soups
Chili
Sandwich makings (just make sure it is good ingredients like hoogie buns, nice cheese, etc.)
Taco salad makings
A large chef's salad works well
a roasted chicken and ranch baked potatoes and a salad or green beans
Ranch baked potatoes
Peel potatoes and boil with a little salt till almost done.
Drain, add a little black pepper, prepared ranch dressing and put into a sprayed casserole dish. Top with butter and cheese of choice. Bake at 400 degrees covered for 30 minutes.

assuming noone has any food allergies or vegetarian preferences here is an idea.
make a garden salad, serve with a couple different dressings.
Chicken & Stuffing Bake (easy but delicious)
Ingredients:
1 1/4 cups boiling water
4 tbsp. butter OR margarine, melted
4 cups Pepperidge Farm® Cubed Herb Seasoned Stuffing
6 boneless chicken breast halves
Paprika
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1/3 cup milk
1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes
Directions:
MIX water and butter. Add stuffing. Mix lightly.
SPOON stuffing along center of 3-qt. shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
MIX soup, milk and parsley. Pour over chicken. Cover.
BAKE at 400°F. for 30 min. or until done.
Strawberry Dessert Pie
INGREDIENTS
1 1/2 cups graham cracker crumbs
1/4 cup white sugar
1/3 cup butter, melted
1 (8 ounce) package cream cheese
1/4 cup white sugar
2 tablespoons milk
3 1/2 cups frozen whipped topping, thawed
2 pints fresh strawberries, sliced
2 (3.4 ounce) packages instant vanilla pudding mix
3 1/2 cups milk
DIRECTIONS
In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter until well blended . Press mixture into the bottom of a 9x13 inch pan. Chill in freezer while you make the filling.
In a large bowl, beat the cream cheese with 1/4 cup sugar and 2 tablespoons milk until smooth. Fold in 1/2 of the whipped topping.. Spread filling over crust. Place the strawberries in an even layer over filling. Prepare instant pudding as directed on package, but using only 3 1/2 cups milk. Spread prepared pudding over strawberries. Chill 4 hours or overnight.
Before serving, spread remaining whipped topping over pudding.

Layer Mexican Casserole
1/2 pound ground beef
1 11oz. can whole kernel corn, drained
1 1/2 cups salsa
1 cup cottage cheese
1 8oz. container of sour cream
5 cups tortilla chips, divided
1 1/2 cups shredded cheddar cheese, divided
Prehat oven to 350 degrees F. Brown meat in large skillet; drain. Add corn and salsa; mix well. Cook until heated through, stirring occasionally. Set aside. Mix cottage cheese and sour cream together.
Layer 2 cups of the chips, 1/2 of the meat mixture, 3/4 cup of the cheddar cheese and 1/2 of the cottage cheese mixture in a 2-quart casserole dish. Repeat layers of chips, meat mixture and cottage cheese mixture.
Bake 35 minutes. Insert remaining chips around edge of casserole; top with remaining 3/4 cup cheddar cheese. Bake an additional 10 minutes or until cheese is melted.
Yield: 6 servings (you may want to double it and bake in a larger baking dish)

Make homemade pizza or get a pizza. Or put chicken or steak on the grill. Make a big salad. Make a fresh strawberry pie or a blueberry tart.

Make it an outside affair. Set up the grill with a couple of side dishes and a light dessert. This way they will feel comfortable and maybe begin a friendship.

If the weather is nice, and you have a grill. I would make some hamburgers/hot dogs on the grill. make some kind of macaroni or potato salad. Good Luck

I don't know of many people that do not like lasagna, salad and garlic bread.
You could make ahead and baked last minute so you would have time to talk to them and get to know a little bit more about them and their life.

Try Tacos.
Make all the fixins and put in individual bowls this way they can prepare thier own taco. This way your not left guessing what they like.
