CHOCOLATE CHEESECAKE
1 1/4 c. chocolate wafers or graham cracker crumbs (about 18 wafers or 16 squares)
2 tbsp. sugar
3 tbsp. butter, melted
2 (8 oz.) pkgs. plus 1 (3 oz.) pkg. cream cheese, softened
1 c. sugar
1/4 c. cocoa
2 tsp. vanilla
3 eggs
Heat oven to 350 degrees. Stir together crumbs and 2 tablespoons sugar. Mix in butter thoroughly. Press mixture evenly in bottom of ungreased 9" springform pan. Bake 10 minutes. Cool. Reduce oven temperature to 300 degrees. Beat cream cheese in large mixer bowl. Gradually add 1 cup sugar and the cocoa, beating until fluffy. Add vanilla. Beat in eggs, one at a time. Pour over crumb mixture. Bake until center is firm, about 1 hour. Cool to room temperature. Refrigerate at least 3 hours. Loosen edge of cheesecake with knife before removing side of pan.

Devil’s Tooth Cheesecake
By Sheila Mills from “Rocky Mountain Kettle Cuisine”
Crust:
1 pkg. chocolate cookie wafers (Nabisco), crushed
½ cube melted butter
Mix crumbs and butter well. Press into a foil lined 10”
Dutch oven and at least 1” up the sides.
Filling:
2 8oz. packages cream cheese
1 c. sugar
1 16 oz. tub ricotta cheese
6 eggs
½ c. sour cream
1 ½ tsp. almond extract
1 ½ tsp. vanilla
12 oz. chocolate chips
¼ c. butter
½ c. whipping cream
Mix first five ingredients until smooth. Melt chips, butter
and cream over low heat until smooth, stirring occasionally, add almond extract.
Pour 1/3 of the white mixture into chocolate mixture, mix
well. Pour into crust. Add vanilla into remaining white mixture and carefully pour over chocolate layer in Dutch oven.
Bake 1 hour 15 minutes. Done when the top cracks and
cake is firm. Desert is great warm, but is better if it cools over
night.

Try this it's so easy: Chocolate Delight Pie
1 9 inch graham cracker shell
1 cup of semisweet chocolate chips
2 tablespoons of milk
8 oz of thawed whipped topping
8 oz. of cream cheese at room temperature
Melt chips with milk in microwave, stir and add to the cream cheese, beat at medium speed, then add the topping and pour it all into the pie shell. Chill for at least two hours and serve cold
