Wow, an hour prep time doesn't seem easy at all! You can make a very excellent breakfast in 7 minutes or less with few ingredients. Try this:
Get a carton of "Egg Beaters". Look through your fridge and get out anything leftover...chicken, onions, ham, cheese. Almost anything will work. Dice up the leftovers.
Get out a pan and spray with cooking spray (Pam). Heat pan. Pour in 1/3 of the Egg Beaters. Toss in diced leftovers. Season with garlic powder (or salt). Heat until top of eggs starts getting firm. Flip if you can, or fold in half in the pan.
Drop some bread in the toaster. When bread pops, remove egg and you are set. Dee lish!

Peel a couple of potatos and then dice. Fry them in a little oil until done. Scramble up some eggs with ham, sausage, onions and green chilis. Add the potato mixture. When that is all done put in some shredded cheddar cheese. Spoon into warm tortillas for a great breakfast burrito.

Mixed fruit cup...the best and healthiest way to start a day:
One pear and one apple, washed off very well, then diced small. You can leave on the skin if you like it, but please wash with a good fruit cleaner to remove chemicals
One can of very well drained maraschino cherries.
One small can of mandarin orange segment
One Small can of peaches: wash and drain off sugar syrup, dice
Three dried apricots, organic preferred, diced tiny.
a bit of concentrated cranberry juice, perhaps three tablespoons, or else, the same amount of elderberry concentrate.
White powdered Stevie, a few sprinkles (available on line or in a health food store: a natural sweetener from the stevia plant without side effects....if necessary, use some honey instead, but no sugar)
Optional:
Some raisins, maybe 20
1/2 cup of a real berry juice from a carton, but not the one with added corn syrups or sugar...real juice
Mix all ingredients, well! refrigerate.
fabulous.
Note: add a pinch of lemon juice and this fruit salad will stay fresh in the refrigerator a full week.

An hour is a long time to prepare a breakfast. You don't say for how many. Is it a brunch for a party or for just your family?
The best breakfast for just your family is:
Scrambled eggs with fresh cooked bacon pieces, diced onions, peppers and shredded mozzarella. Put your creation on lightly buttered toast.
Scramble your eggs with water to make it fluffier. Cook the eggs over medium heat and when they are almost done, add your ingredients and cook until cheese is melted.
Make sure to serve fresh orange juice and/or orange slices.

Wow....an hour of prep? It doesn't take me that long to make a really nice dinner. Most breakfasts are simple....eggs, cheese, bacon, maybe saute some potatoes. If you keep flour in the house, you can advance to pancakes or popovers, none of which require an hour of prep.
