Manchurian
Ingredients:
1 large carrot, peeled and coarsely chopped
1 small green chili pepper, seeded and coarsely chopped
1 medium red onion, coarsely chopped
2 large celery ribs, coarsely chopped
1 bunch fresh cilantro, including stems, coarsely chopped
10 medium garlic cloves, peeled
1 tablespoon vegetable oil
2 cups ketchup
1/4 cup soy sauce
1 tablespoon sugar
1 teaspoon chili powder or 1/2 teaspoon cayenne
Salt & freshly ground black pepper
Steps:
1. In a food processor, combine the carrot, chili pepper, onion, celery and cilantro. (You may need to puree half these ingredients first to make room for the rest.).
2. Add the garlic and pulse until blended.
3. Heat the oil in a medium saucepan over medium-high heat. Put the pureed vegetables in the pan and heat through,
3-4 minutes.
4. Add the ketchup and soy sauce and cook for 10 minutes more.
5. Reduce the heat to medium-low. When the sauce starts to thicken, add the sugar, chili powder, and salt and pepper to taste.
6. Serve warm for the best flavor or at room temperature.

The following is the method by Sanjeev kapoor to make Veg. Manchurian
VEGETABLE MANCHURIAN
Method
Reserve the chopped greens of the spring onions for garnishing. Mix cabbage, carrot and French beans in a bowl and thoroughly rub in one teaspoon of salt. Add spring onion, green capsicum, refined flour and one-fourth cup of cornflour. Mix thoroughly. Shape into lemon sized balls. Heat sufficient oil in a wok and deep-fry vegetable balls in small batches for three to four minutes on medium heat or until golden brown. Drain and place on an absorbent paper. Heat two tablespoons of oil in a wok or a pan and stir-fry ginger and garlic briefly. Add green chillies. Stir-fry briefly. Add soy sauce, sugar, MSG and salt to taste. Stir in vegetable stock and bring to a boil. Stir in cornflour blended in a cup of water and cook for a couple of minutes or till the sauce starts to thicken, stirring continuously. Add fried vegetable balls, vinegar and mix well. Serve hot, garnished with spring onion greens.
Tips
If you want to serve it dry without the sauce, reduce the stock to one cup and cornflour in the sauce to one and a half tablespoons only.

1 tsp Sugar
1/2 tsp MSG
Salt to taste
2 1/2 cups Vegetable stock
3 tbsps Cornflour
1 tbsp Vinegar
