Best Steamed Lapu-Lapu
Ingredients:
1 pc whole lapu-lapu
5 gms parsley, chopped
300 gms mayonnaise
5 gms red bell pepper, chopped
3 pcs egg whites, boiled
10 gms salt
3 pcs egg yolks, boiled
10 gms ground pepper
Prep:
Steam lapu-lapu until cooked, about 30 minutes.
Set aside at room temperature. Keep in a chiller for an hour.
Remove skin. Spread mayonnaise on both sides of the fish.
Sprinkle salt and pepper.
Garnish with eggs, parsley and red bell pepper.

At a cooking demo on Chinese New Year dishes, a real Chinese cooking teacher, Mrs. Kimhong, taught the audience how to do Steamed Lapu-Lapu the right way.
It is a Chinese New Year specialty called Nien Nien Yow Yee (forgive my spelling. Read it as pronounced, please.) Fresh fish in water are symbols of prosperity.
Don’t get intimidated by this recipe. As long as the fish is very fresh and you have a fire-breathing dragon of a steamer, you’ll do well.
You will need:
Part I
1 fresh fish (black Lapu-Lapu is best), cleaned and washed well (make sure it fits into the steamer)
Finely sliced leeks or young onions
1 thumb ginger, sliced thick
1 tsp rice wine
1 tsp ginger juice
Some salt
3 pairs chopsticks
Stuff ginger and leeks inside fish cavity. Rub with ginger juice, rice wine and salt. Let stand in refrigerator for 30 minutes. Then rub fish with: dash of ground black pepper and sesame oil.
Part II
Prepare to steam: crisscross chopsticks on steaming plate and position fish. Make sure steamer is on rolling boil with plenty of water to create a lot of steam. Place fish platter in steamer only when water is rolling boil. Steam fish for about 15-30 minutes, depending on the size and the heat of the steam. Do not peep till after 15 minutes.
Part III
Make the sauce: gather the juices from steamed fish and combine with some sesame oil, soy sauce, dash of salt and some chicken powder, all to your taste. Set aside. Slice leeks and ginger into fine julienne. Sprinkle all over the top of steamed fish. Heat some corn oil till smoking, then pour.
Next, heat the sauce till boiling and pour. Top with plenty of fresh wansoy leaves.
