have tried to use the deep fryer a few times now and i cannot get the food to fry correctly once it has reached its temp. any tips would be appreciated.

You're not over loading the Fryer are you? You will have to fry the food in batches. Maybe you should start out with no more than 3 pieces at a time. You might want to use a frying thermometer to maintain the desired temperature range until you get the hang of it. I think that would be the best thing to do until you gain the confidence that comes thru trial and error and finally success. Get a thermometer [or phone the manufacturer].
