Yes it does because of the ingredients that are usually used to pickle. Usually there is sugar involved and that will change the way some of the nutrients can be received by the body. Don't let that stop you though, its still healthy, just not always as healthy as fresh.

Any kind of processing will destroy some nutrients. Whatever you are pickling, go to the store and pick up a jar and read the nutritional info.

Yes, heat and acid... not many vinamins like that combo.
