Here you go...
Leftover Mashed Potato Pancakes
2 servings
35 min 5 min prep
2 cups mashed potatoes (approximately)
1-2 egg
1/4 cup flour
salt
pepper
garlic
onions (optional)
chives (optional)
cheese (optional)
oil or Crisco, for frying
sour cream (optional) or applesauce, for garnish (optional)
Mix all ingredients into mashed potatoes.
Preheat skillet and add a couple of tablespoons of Crisco shortening or oil.
Make sure the mix is not too thin.
Pour 1/4 cup batter into hot pan; brown on both sides and enjoy with sour cream or applesauce.

Maine Potato Candy
Ingredients
4 cups confectioners' sugar
4 cups flaked coconut
3/4 cup cold, plain potatoes, mashed (do not use leftover mashed potatoes made with milk or butter)
1-1/2 tsps. vanilla extract
1/2 tsp salt
1 pound dark candy coating
1 cup semisweet chocolate chips
Instructions
In a large bowl, combine the first five ingredients.
Line a 9-inch square pan with foil; butter the foil. Spread coconut mixture into pan. Cover and chill overnight.
Cut into 2 x 1-inch rectangles. Cover and freeze.
In a microwave or double boiler, melt candy coating and chocolate chips. Dip bars in melted coating and chocolate chips; place on waxed paper to harden. Store in an airtight container.
Yield: 2 pounds

Shepherd's pie! Make up the meat and veggie and gravy mix, and top with the mashed potatoes. Or you could just put them in a dish and add cheese on top and bake. Or you could add an egg or two and make potato pancakes. I've even seen recipes where you can make soup out of them.

POTATO PUFFS
1 c. mashed potatoes
1 egg
2 tsp. baking powder
2 tbsp. flour
Shortening for frying
Mix first 4 ingredients together. Drop by teaspoonful into hot shortening. Fry until golden brown. Lift out and drain on paper towel.

Potatoe patties:
add a beaten egg, garlic salt to taste, shape into patties and dip in crushed crackers, then fry in butter, turning them once, until golden brown and crunchy.
Or, potato casserole:
add 8 oz. sour cream, 8 oz. cream cheese, a quarter teaspoon garlic salt, and 4 oz. shredded cheddar cheese. Mix together, put ina greased casserole dish and bake in a 350 over for 45 minutes. Top with another 4 oz. shredded cheese, put back in oven 5 minutes or so until the cheese melts.

Empty into a HOT skillet and sear untill the 'crispy' is too your likeing, flip them over and dump a BIG hand full of grated chees on top, sprinkel some crushed ice around the outer edge, put a lid on the skillet, and let it cook about as long as it cooked to get crispy the first time.... the cheese melts and frys around the tattors, and wolaaa!!!
the crispy-er, the better for me..
YUMMM!! i do some other seasonings to them now and then,...but thats as good a breakfast tattor as there is for clucker-nuggets and backon!!!
TRY IT... if it werent such a hassel, thats the way i would eat ALL spuds.

My mother-in-law makes potato salad out of hers..she adds, boiled eggs, relish and salad dressing..
Doesn't taste to bad..

This will taste similiar to twice baked potaoes~~~ add butter/shredded cheese (your preference) maybe some sour cream & bake in mounds on a cookie sheet @ 400 degrees until brown on top...you may have to place under the broiler but watch closely,they burn easily!
