I got this one on recipezaar.com
Put the pork roast in the crockpot and pour a coke over it, cook on low for 12 hours. Remove it from the crock pot and shred using two forks and put back in with an 8 oz bottle of bbq sauce and cook on low for 5 more hours.
Says it freezes well. I'm going to make next week and seperate and vacuum save and freeze some for later.

Get a pork shoulder roast. Add 1 hot can of beef broth, 1 bay leaf, 1/2 tsp of pepper and 1/2 tsp of kosher salt. (If all you have is table salt use 1/4 tsp). I add 2 diced cloves of garlic and 1/2 an onion. I get it till it simmers on high then turn it on low for 5 hours. I remove the roast and shred it on a plate. I remove all of the fat and liquid from the pot and keep it in a bowl. I return the meat to the pot and turn it on high and add my favorite BBQ sauce. I'll add as enough to cover the meat. basically as much as you want. I will allow it to cook for 30 minutes to an hour more. If it gets to thick add a little bit of the pork broth from the bowl you saved. I serve it up on toasted onion rolls or hamburger buns. Good luck!

Carnita's are the Mexican version of pulled pork, here's my recipe and it is awesome!
Pork Carnitas
1 bone-in pork shoulder roast, about 4 lb.
1 small onion, chopped
4 cloves garlic, minced
1 orange, quartered
1 lime, quartered
3/4 cup water
1/4 cup brown sugar
2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
Corn or flour tortillas
Accompaniments: beans, lettuce, shredded
Cheddar or Jack cheese and pico de gallo
DIRECTIONS
Prep time: 15 minutes
Cook time: 4 to 10 hours in a slow cooker
Trim fat from pork and cut meat into 2 pieces. Place all ingredients except tortillas and accompaniments in a large slow cooker. Cover and cook on HIGH for 4 to 5 hours or on LOW for 8 to 10 hours. Let cool slightly, then remove from slow cooker. Shred meat using 2 forks, stirring in some of the cooking liquid. Spoon into warmed tortillas with desired accompaniments.
Makes 6 to 8 servings.
