These are my favorite summer recipes.
Pig Out Cake
1 box of yellow cake mix
1 small can (11oz) of mandarin oranges, undrained
1/2 c. oil
4- eggs
Icing:
12-16 oz Cool whip (I use 16 oz)
1 lg. can crushed pineapple, undrained
1 sm. pkg. instant vanilla pudding
Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.
Combine icing ingredients and spread on cooled cake.
Cake does need to be refrigerated until ready to serve.
* I sometimes add flaked coconut to the icing mixture.
Watergate Salad
1 lg can crushed pineapple
1 box pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.
This is my version of ambrosia. My family is not too crazy about fruit cocktail, so mine is simple.
4-5 small cans of mandarin oranges, drain all the cans except one
1 bag of mini marshmallows
1 small container of sourcream
Mix all ingredients and place in bowl, cover and store in refrigerator for at least one hour. The longer the better. Believe it or not this is a sweet tasting dish, i guess its because of the marshmallows.

PINEAPPLE CREAM LOAF
1/2 c. butter
1 1/2 c. sifted confectioners sugar
2 egg yolks
1/2 tsp. lemon extract
8 3/4 oz. crushed pineapple, drained (3/4 c.)
1 c. dairy sour cream
2 stiffly beaten egg whites
8 lady fingers, split lengthwise
Cream butter and sugar together until fluffy. Add egg yolks, one at a time beating after each. Stir lemon extract and pineapple. Fold in sour cream and egg whites. Line bottom of 9 x 5 x 3 inch loaf pan with half the lady fingers. Top with half the pineapple mixture. Repeat layers. Chill 6 to 8 hours. Makes 8 to 10 servings.

Berry Poke Cake
Make a 13 x 9 white cake, adding one small box of instant vanilla pudding into the batter. Once baked, take a wooden spoon and with the round handle side, poke holes into the cake. Now make a box of strawberry jello, but after melting the powder in boiling water, add a few ice cubes to cool off hot jello, do not make it as liquidy as is called for, make it rather thick. Pour this over cake into all the poked holes. Now refrigerate this. In a bowl, make another box of instant vanilla pudding and then fold in a small container of Cool Whip, mix well. Spread on top of cooled cake and then return to refrigerator. Wash and slice fresh strawberries into a bowl, add some sugar - 1/2 cup per pint of cut strawberries. Let the strawberries make a syrup. When you cut your cake and put it in your serving bowls, add some of the strawberries in their sugary syrup on top. This is absolutely out of this world. You'll love it!

This is my favorite. It's cool, simple, fluffy, and easy.
Pistachio Pie
1 Keebler graham crust
1 pkg. pistachio pudding mix
1 15 oz. can of crushed pineapple, slightly drained
1 tub of Cool Whip
Stir the mix and pineapple together and let sit 10 minutes. Fold in the Cool Whip, dump into the crust, and refrigerate 4 hours.

BBQ BANANA SPLITS Yield: 6 6 large bananas, unpeeled, stems removed 2 cups semisweet chocolate chips 1 (10.5 ounce) package miniature marshmallows (Be creative with other toppings like maraschino cherries, peanut butter chips, coconut, butterscotch morsels or caramel.) Preheat the grill for high heat. Spray 4 sheets of aluminum foil, large enough to wrap bananas, with cooking spray. Slice the peel of the banana from stem to bottom, while slicing the banana inside lengthwise. The bananas can be cut into slices instead if you like, (while still in the peel) for easier handling later. Carefully open the banana just wide enough to place the chocolate chips and marshmallows inside the peel with the banana. Stuff with as much of the chocolate chips and marshmallows as desired. Wrap the bananas with the aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chips and the marshmallows, about 5 minutes. Unwrap bananas, open the peels wide, and eat with a spoon.

Summer Delight Cake with vanilla ice-cream
INGREDIENTS:
1 angel food cake, homemade or purchased
1 quart orange or lime sherbet, softened
1 quart lemon sherbet, softened
16 ounces frozen whipped topping, thawed
PREPARATION:
Sliced cake horizontally into 3 layers, place each layer on a plate. Spread orange sherbet on 1 cake layer, and freeze. Spread lemon sherbet on 1 cake layer, and freeze. Place lemon layer on top of lime layer, and top with remaining cake layer. Spread whipped topping on top and sides of cake. Freeze. Once completely frozen, wrap in aluminum foil until ready to serve.

Vanilla Ice Cream
INGREDIENTS:
1 cup powdered sugar
1/2 cup whipping cream
1 tablespoon plus 1 teaspoon vanilla extract
1 quart half-and-half
PREPARATION:
Directions for vanilla ice cream
Combine powdered sugar, whipping cream and vanilla; stir until smooth. Add half-and-half; pour into freezer container of electric freezer. Freeze vanilla ice cream according to manufacturer's directions.
