BEST EVER MEATLOAF

2 eggs
2/3 cup milk
3 slices bread
1/2 cup chopped onion
4 oz of shredded cheese
1 teaspoon salt
1/4 teaspoon of black pepper
1 1/2 lean ground beef

TOPPING:

1/2 cup tomato sauce
1/2 cup brown sugar
1 teaspoon mustard

Beat eggs. Add milk and bread and let stand until bread absorbs liquid. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf.
Bake at 350 degrees for 45 minutes. Combine topping and spoon over meatloaf after about 30 minutes. Spoon topping over meatloaf every 10-15 minutes while meatloaf is cooking.

My mother made good meatloaf when I was growing up, but I think I've improved on it a lot.

Whether you use all ground beef, or a mixture of beef, pork, veal, and/or sausage is up to you. I like pure beef, but can appreciate the rest.

I know many people put bread crumbs, or crushed corn flakes, in theirs, but I don't like how that affects texture. I think that's done to make the meat go farther.

Sauteeing the vegetables is the biggest difference. Be sure to finely chop your onions, peppers, garlic, and whatever other veggies you want, and lightly fry them in olive oil.

Add to the meat and veggies your seasonings - salt, pepper, Italian herbs, and mix thoroughly. Adding an egg helps it stay together, especially if you don't have a meatloaf pan.

The final "trick" is adding spaghetti sauce (either homemade or one of the Classico varieties), tomato sauce, or just ketchup. The tomato gives both moisture and flavor that really enhance the meatloaf. I usually put some in both the mixture as well as on top - to form a glaze.

Like most of my dishes, I don't use a recipe and rarely make things the same way twice. I encourage you to start with a simple recipe then experiment with it by adding or changing things a little here and a little there.

try this it's awesome.

4lbs turkey burger
2 eggs
1 package saltine crackers
3 cups oatmeal

then season to taste with seasoning salt, garlic powder, pepper, really whatever you like.

but then.....add in a lil bit of every condiment in your fridge
including salad dressings,mustard,ketchup,BBQ,syrup,whatever.

mix well, then put it in a proper cooking dish and bake at 350 until center temp reaches 180. like a half hour before it gets done mix some BBQ sauce with brown sugar and cover the meatloaf with it and sprinkle some crushed mint on top and let it finish cooking.....it's AWESOME. kinda sounds weird but it's great.

Use half ground sausage and half ground beef. Next use finely shredded or minced carrots instead of breadcrumbs. This will halp make a soft and delicious meatloaf. The spices should be handled by you though.

Well, I know it's not me.

I had meatloaf at a Cracker Barrel recently, and it was great.
