i have a recipe for brownies and i don't have any vegtable oil, which the recipe calls for. however, i have canola oil. are the two interchangable? thanks.

John I use canola oil for all my cooking needs
and have had very good results it has a high smoking point for sauteing and it leaves no after taste in baked recipes. The only place I do not use it is in the deep fat fryer, there I like to use peanut oil

Yes, they are. Vegetable oil is a mixture of various oils - some may be good oils, but there may be some less good oils in there. canola, corn, peanut, safflower,etc. are pure oils made from canola, corn, peanut, safflower, etc.

I only keep 2 oils in my house: canola and olive. I use the canola for baking and any time I want a mild or unflavored oil (and that is usually just baking). I use olive oil for everything else.

Yes. Any recipe calling specifically calling for vegetable oil general refers to the generic "Vegetable oil", as labelled on the store shelves. It is commonly a vegetable oil blend of soy, corn, and/or rapeseed (canola). Thus, it would be suitable to substitute soy or corn or canola oil (or vice versa).

It should be noted though, that Vegetable oil can refer to any oil made from plants (as opposed to animal fat), including corn oil, soybean oil, peanut oil, seseme oil, olive oil, etc. All these oils have different flavours and uses.

Yes! They are very interchangable, they contain the same ingredient, "rape seed." Canola oil is a healthier oil choice actually, because it has 50% less saturated fat than some vegetable oils and olive oils.
