Misphrasing. Evolution is not the proper description because evolution implies adaptivity, ie that Judaism needed to change to survive and so it did.
Rather, Christians see Judaism as a precursor to Christianity such that Christianity is the fulfillment of Judaism, not the evolutionary by-product. In other words, Christianity would have come to be, regardless of the circumstances. Think of it in terms of atomic science. It did not, technically speaking, evolve from Niels Bohr's research, but rather is a consummation thereof.
Short answer: Judaism still exists because it was not meant to expire with the coming of Christianity.

The same reason Christianity split into different sections - though they believed in the same God, they had disputes over minor historical/Biblical facts. In the case of the Jews, Christ was never their savior, and Christians obviously disagree. They share common roots, but have evolved seperately and hence turned into distinct religions.

Christianity did not evolve from Judaism.
It was founded on the teachings of Jesus.
The Bible says that Christians were grafted in to the promises of Judaism.

Because christianity merely stole the history of judaism to justify itself. Christianity is twisted variation of pagan beliefs under the guise of fulfillment of Jewish scripture. Naturally a religion that is the base would exist despite the attempts of others to corrupt it.

It is natural that there would still be Jews..
It is extremely unnatural to think that all Jews would become Christians.
Exactly like thinking that all evolving primates would become humans. There should be evolving primates living today if evolution were true.. It obviously isn't

I prefer to think of it more as a deviation than evolution. We have yet to see if it is better fit to survive. So far, it seems to still be anyone's game. But I am certain that a day will come when one side will clearly prevail.
