Giant Meatball Sub
Preparation time: 15 minutes
Cook time: 30 minutes
You Will Need
2 eggs, beaten
1/3 cup milk
1 medium onion, chopped
2 garlic cloves, minced
1 cup soft bread crumbs
1/2 teaspoon salt
1/2 teaspoon Italian seasoning
1 1/4 pounds bulk Italian sausage
3/4 pound ground beef
2 jars (26 ounces each) spaghetti sauce
1 loaf (1 pound) unsliced French bread, halved lengthwise
8 ounces sliced mozzarella cheese
Shredded Parmesan cheese, optional
What to Do
1. In a large bowl, combine the eggs, milk, onion, garlic, bread crumbs, salt and Italian seasoning. Crumble sausage and beef over mixture; mix well.
2. Shape into 1-inch balls. Place in a greased 13 x 9 x 2-inch baking dish.
3. Bake at 425°F for 15 minutes or until browned.
4. In a Dutch oven, heat the spaghetti sauce over medium heat. Add meatballs; simmer for 15 minutes. Meanwhile, bake bread at 325°F for 10 minutes or until heated through.
5. Place mozzarella cheese on bottom half of bread; spoon meatballs onto cheese. Replace top.
6. Slice sandwich into serving-size portions; serve with extra spaghetti sauce and Parmesan cheese if desired.

Deluxe Meatball Sub
I like to top mine off with some extra pepper-jack cheese and my fiance tops his with some spicy jalapenos!
Ingredients:
4 pounds ground beef
5 ounces French-fried onions -- coarsely crushed
1 cup seasoned bread crumbs
4 eggs
1 teaspoon salt
1 teaspoon black pepper
18 ounces beef gravy
1 tablespoon prepared horseradish -- drained
26 ounces spaghetti sauce
1/4 cup grated Parmesan cheese
8 sub sandwich rolls -- split
Directions:
Preheat oven to 350F. In a large bowl, combine ground beef, French-fried onions, bread crumbs, eggs, salt and pepper; mix well. Shape into 24 meatballs and place on a large rimmed baking sheet. Bake 18-20 minutes, or until cooked through and no pink remains.
In a medium saucepan, combine gravy and horseradish over low heat. In another medium saucepan, combine spaghetti sauce and Parmesan cheese over low heat. Simmer both sauces 5 minutes or until heated through, stirring occasionally. Place three meatballs on each roll and serve with sauces.

my boyfriends favorite recipe!
INGREDIENTS
2 (6 inch) submarine buns
1/2 pound lean ground beef
2 tablespoons beaten egg
2 tablespoons milk
1 teaspoon diced onion
1/8 teaspoon salt
Dash pepper
1/2 medium green pepper, julienned
1/4 cup sliced onion
2 teaspoons canola oil
1 teaspoon all-purpose flour
1/3 cup chili sauce
1/3 cup water
1 teaspoon brown sugar
1/4 teaspoon ground mustard
DIRECTIONS
Cut a thin slice off the top of each bun; scoop out bread from inside. Cover buns and tops with plastic wrap; set aside. Crumble 1/3 cup of the removed bread and place in a bowl. Add the beef, egg, milk, diced onion, salt and pepper; mix well. Shape into eight meatballs, about 1-1/2 in. each.
In a nonstick skillet, cook meatballs for 15-20 minutes or until no longer pink. Remove with a slotted spoon; set aside. In the same skillet, saute green pepper and sliced onion in oil until tender. Remove with a slotted spoon; set aside. Stir flour into skillet. Add chili sauce and water. Bring to a boil; cook and stir for 1-2 minutes.
Stir in brown sugar and mustard. Add meatballs, green pepper and onion; cover and simmer for 15 minutes. Meanwhile, warm buns at 325 degrees F for 8-10 minutes. Spoon meatballs and sauce into buns; replace tops.
we add mozzarella cheese.
