To believe in the myth that there were other religions before Judeo-Christian religions is by itself a myth. So now you ask me how this is possible? Very simple. Why don't you scan the documents of the so called non Judeo-Christian religions for what they are saying? Is the document by itself supporting what it is saying uniformly, consistently through out the entire book etc.
Then read the Bible by yourself. You don't have to listen to the pope or to the next door pastor. You do it yourself. Come to the conclusions based on the text, message, doctrine contained therein within the book.
Anyway, you haven't given any specifics about Christians changing stories.
A simple analogy I could give is this: Can you claim 2 + 2 + 4 and 2 + 3 = 4 (Yes FOUR). No, based on rational thinking and acceptance multiple things like above aren't true. Some people say all religions are same based on same set of basic principles.
Well, even a 18 wheeler Mack truck and a 4 wheeler Corolla are the same, if you strip out the specifics. Both vehicles are used for transport, both have wheels, both have engines, both have windows and doors, and so on. But on rational level, it is the specifics that make a vehicle or a religion its uniqueness, its own identity.

What you've probably experienced is a badly worded attempt to show that your proof of reasonable doubt can still fit - and even aid - the concept of God.
I.E
Creation:
synopsis: Genesis 1:1 then God created the universe in 6 days and rested on the 7th.
reasonable doubt:
Science proves that just forming the earth took billions of years.
Explanation: God is all-powerful, the creator of everything with control of everything. It stands to reason that an all-powerful being could in fact force billions of years of formation into 6 days, being all-powerful.
Or OTHERS might explain it this way:
There were no clocks at the creation of the universe, so what might have been 6 days for God could have been billions of years in our terms of time.
As to the rip-off of other myths, I would have to have an example or more details in order to help.

No, for real, I am just kidding. I don't blame you. I get irriated myself. Just pleeeeease don't assume we all feel the same way. :)
However, to answer your question, I think we all do that. We think something, hear something else that contradicts it, and then try to fit our schema of things. Its called accomodation in the psychology world (so see, it happens in regular science, too.) Take eggs, for instance. You hear, eggs are good for you. 10 years later, no egges are bad for you. Now its "Eggs are good for you, but don't overdo it." So what do you do? You accommodate.
As far as the stories go, not all Christians take them completely literally OR discount all other stories. I am not entirely sure what stories you mean, though, so I am not entirely sure I would agree that they came first. Biblical literature is some of the oldest (not in English, obviously; old overall). Most other mythology that we hear of today DID come after stories from the Old Testament. The Bible was written over a period of thousands of years. Someone didn't plop down one day in 100 A.D. and write it. It is basically an anthology of literature written from Moses' time through Paul's.

If the stories in the New Testament were not true, then explain this to me:
Why did all the apostles die violent deaths because of their testimony about Jesus?
Each one of them (except for John) were confronted by the ruling authorities (whether religious or civil), and were threatened with stoning, beheading, and other tortures, as long as they maintained their testimony. They were even given opportunities to recant, and live.
Nevertheless, they chose to die, knowing that they had a better future awaiting them.
No one will go to their death for a lie that they know to be a lie. An example of this comes from modern history, where the Watergate conspirators, when threatened only with prison, began ratting each other out, hoping for a lenient sentence. None were threatened with death, and they couldn't keep their lie straight for two weeks.
The apostles lives for decades after the events of Jesus' life, and told their stories everywhere they went. And they chose death when it was called for.

God told Satan what his end would be from the beginning. Read about it in Genesis 3. Satan knew the story of the coming of the promised seed of the woman. He know everything he needed to know in order to spread the confusion that most religious beliefs and practices have caused throughout history.

Ape, monkey, primate, mammel, comparable ****. all the above is right. it is like blaming we call a sq. a rectangle. properly a sq. is likewise a rectangle. properly I say a sq.(ape) is a trapezium(primate) and the two could be properly suited.

They are blinded by faith( or another word for faith is brainwashing). They cant accept any other 'truth' than there own. Its sad, really.
