Evidently the default action is to grey-out the Task and give it a strike-through. I don't want this. I want the Task to be gone as soon as I check it as being complete.

Actually you cannot make them delete and you don't want to.

You want to "filter" them out.

Open the tasks section in Outlook, go to View, arrange by, current view and customize current view and go to the filters section; filter out the completed and you have what you want.
