I am going to a scrapbook crop where we have to bring a potluck item. I'm looking for something quick and easy to make that will impress. Any ideas? Thanks!!!

I don't really know what part of the dinner to provide, I'd like to bring an entree dish since in my experience everyone brings deserts or pasta salad.

No matter who I've made this dip for.. it has quickly become a favorite.. now I get requests for it....

Buffalo Chicken Dip

2 8oz blocks of cream cheese
1 lb of chicken, cubed, fully cooked (I've used the Hillshire Farms chicken strips, I just cut them into bite-sized pieces)
1 jar of Wing Sauce (Nance's is the best I've found for this recipe)
1 cup of Ranch Dressing
2 cups of cheese (any kind you like, I prefer Monterey Jack)

Layer the cream cheese in the bottom of a 9x9 pan, top with the chicken. Pour the wing sauce, then the Ranch dressing over the top, cover with the cheese. Bake at 400 deg for about 30-45 minutes covered (if uncovered, the cheese is too hard and makes it difficult to serve)

Serve with tortilla chips.. I'm tellin' ya.. this is a HIT!

How fun! Here are some ideas for your potluck dish:

1. Rice A Roni Salad: 2 boxes chicken rice a roni, made according to package directions and cooled, 1/2 cup diced celery, 1/2 cup sliced green onion, 1 jar pimento stuffed green olives, sliced, 1/2 to 1 cup mayonaise, 1 tsp curry powder. Mix all ingrediants together and chill for at least 2 hours before serving. You can also add cooked diced chicken or ham for a heartier dish.
2. Spinach Salad: 2 bags baby spinach, ends trimmed, 1 large can chilled mandarin oranges, drained, 1 cup chopped candied walnuts, 1 container crumbled feta or gorgonzola cheese, 1 bottle Catalina dressing. Add ingrediants and toss with dressing (adjust amount of dressing you want as you go). Chill and serve.
3. Chinese Chicken Salad: 1 head green cabbage, 1 bunch green onion, 2 tablespoons toasted sesame seeds, 3 boneless, skinless chicken breasts, 1 package Top Ramen, noodles only, 1/2 cup salad dressing, 3 T sesame oil, 1/4 cup seasoned rice vinegar, 1 T sugar, 1/2 tsp salt, 1/4 tsp red pepper flakes (opt.), 1/2 tsp MST (opt.). Mix dressing and set aside. Season breasts and cut into cubes. Saute until cooked thru and cool. Chop cabbage and slice green onions. Break up ramen noodles and add to cabbage mixture. Toss with chicken and dressing. Let chill for at least 2 hours before serving, preferrably more.

well, first are you wanting a recipe for dessert, main dish or side dish?
If you are looking for dessert...make cupcakes! I know it sounds childlike, but really...who can resist a yummy piece of cake? And if you want to get really creative with the decorations, there are so many ways to do them!
Main dish or side dish? Here is a yummy pasta dish (mind you not everyone like onions and tomatoes, but...)

Penne Insalata
Cooked Penne pasta (as much as you need for your group)
Enough Olive Oil to coat
Chopped Onions
Chopped Tomatoes
Salt to Taste
Serve this warm with some french bread

You need to tell us what part of the dinner you are providing, A nice green salad, with chilled, grilled chicken breast strips, grape and cherry tomatoes, cucumber slices, grated carrots, and croutons served with a light vinaigrette is cool and easy to prepare.

You can buy everything, including the chicken strips prepared at the grocery store.

You can either make the vinaigrette yourself of provide a selection of dressings. This is light and cool.

this one is yummy....
Brown hamburger meat, 4 slices of bacon chopped and chopped onions till all meat is browned. Drain the fat and put 1/2 LB of cubed Velveeta cheese in the pan and return to the fire till the cheese is fully melted. Take off the flame and cool for 10mins. While cooling take Pillsbury pizza dough and lay out on a greased cookie sheet so the pizza dough is a rectangle....spread the cooled meat mixture onto the dough....fold the dough longways till the dough is sealed and resembles a long rectangle with seam side down...bake in a 400 degree oven for 20 mins or golden brown....Guarantee they Will love it!

ENCHILADA SQUARES

1 lb. ground beef
1/4 c. chopped onion
4 eggs
1 (8 oz.) can tomato sauce
1 (5 1/3 oz.) can evaporated milk (2/3 c.)
1 (1 1/2 oz.) env. enchilada sauce mix
1/3 c. sliced pitted ripe olives
2 c. corn chips
1 c. shredded cheddar cheese (4 oz.)

In skillet, cook beef and onion until meat is brown and onions are tender. Drain off fat. Spread meat mixture in a 10"x6"x2" baking dish. Beat together eggs, tomato sauce, evaporated milk and enchilada sauce mix; pour over meat. Sprinkle with olives; top with chips. Bake, uncovered at 350 degrees until set in center, 20 to 25 minutes. Sprinkle with cheese. Bake until cheese melts, 3 to 5 minutes. Makes 6 servings.

BAKED BEANS AND HAMBURGER
1 lb. hamburger
1 c. onions
2 tsp. salt and pepper
2 cans pork and beans
1/2 can tomato soup
1 tsp. vinegar
1 tsp. mustard
1 tsp. Worcestershire sauce
Brown hamburger and onions. Add other ingredients. Mix, cover, and bake at 325 degrees for 35 minutes.

Meat filled Crescent ring:

Ingredients:
2 packages crescent rolls
1 lb. ground beef
1 envelope taco seasoning
1 cup grated cheddar cheese
shredded lettuce
chopped tomatoes
one bunch of green onions, chopped
1 diced avocado
1 cup sour cream
salsa
Method:
Brown ground beef and follow taco seasoning directions on back of package.
Add the cheese and place aside for the time being.
Unroll the two packages of crescent roll.
On a cookie sheet, place the crescent roll wedges in a circle, wide side of wedge towards the middle, pointed end towards the outside.
Place the ground beef on the crescent rolls and wrap the pointed ends of the rolls around the meat mixture, so that it forms a ring.
Bake at 375 F for approximately 12 minutes.
When baked remove from oven and place on a large platter.
On the inside of the ring place lettuce, tomatoes, onions, and avocados.
Dollop sour cream and salsa over all.
Cut into wedges and serve warm.

If you don't mind spending a bit, make a fresh fruit bowl--it's so pretty and refreshing among all the heavier foods that people bring!

Cut up chunks of watermelon and cantaloupe, throw in some red and/or green grapes, some ripe strawberries, and fresh chunks of pineapple. Especially good for groups of women--there's bound to be some who are counting calories!

MY FAVORITE POTLUCK SALAD

1 head lettuce, cut in pieces
1 c. diced celery
1 c. sliced carrots
1 med. onion, chopped
4 hard boiled eggs, sliced
12 strips bacon, fried and crumbled
1 c. frozen peas, thawed and uncooked

Layer lettuce, celery, carrots, peas, onion, eggs and bacon in a 9x13 pan (in the order given).

DRESSING:

2 c. salad dressing
2 tbsp. sugar
1 tbsp. vinegar

Mix dressing and spread over vegetables. Chill. When ready to serve, sprinkle 1 cup shredded cheese on top

Go to the store and buy pita bread. Bake them in the oven and while that is happing, get some mayonaise, cayenne pepper, salt, and black pepper. Mix all together. you now have the dip. The pita chips are done when they are crispy.

The hint to the dip is...to put EXTRAAA cayenne pepper

taco dip & chips, everyone always loves this when i bring it! its cheap and tasty!!

1 can refried beans
1 can chili
1 container sour cream
1 medium jar salsa
iceberg lettuce
tomatoes
black olives
scallions (green onions)
mexican cheese
jalepeno peppers sliced


in a dipping tray, put refried beans, chili, salsa, sour cream, cheese, lettuce, tomatoes, scallions, peppers, and olives in layers. chill and serve with tortilla chips!

always a big hit!!!

(depending on tray size, you may or may not use all salsa and sour cream)
