RICE CAKE S'MORES

Peanut butter (optional)
1 plain rice cake
1/2 of a 1 to 1 1/2 oz. bar milk chocolate
12 tiny marshmallows

If desired, spread peanut butter on rice cake. On a microwave-safe plate top rice cake with chocolate, then marshmallows. Do not cover. Micro-cook on 100% power (high) for 15 to 20 seconds. Let stand for 30 to 60 seconds. Makes 1 serving.
MINTY RICE CAKE S'MORE: Prepare as directed, except substitute 2 cream filled chocolate covered peppermint patties for the milk chocolate.

RICE CAKE AND CHEESE SNACK

2 rice cakes, unsalted
1 tsp. prepared yellow mustard
1/4 c. cheddar cheese, grated

Preheat oven to 350 degrees. Place rice cakes on baking sheet or aluminum foil and bake 3 to 4 minutes or until crisp. Remove from oven, spread with mustard and top with cheese. Return to oven and bake 3 to 4 minutes just until cheese melts. Serve immediately

I used to substitute rice cakes for bread. Some of my favorite snacks included:

1. A little mayonaise and sliced turkey on a rice cake
2. Peanut butter and jelly on rice cakes
3. Spanish Manchenga cheese and a little mustard on rice cakes
4. Deli sliced ham and mustard on rice cakes
5. Lean roast beef and horseradish sauce on rice cakes
6. Pico De Gallo on rice cakes
7. Using the rice cake as you would a bruschetta
8. Mango Chutney and cream cheese on rice cakes
9. Smoked salmon, cream cheese (or creme fraiche) and a sprig of dill on rice cakes

The list goes on. Have fun trying your own special combinations!

Vegemite is possible the best food ever... *get a fresh bread roll and kind of gut it then spread the vegemite on really thick *Straight out of the jar with a spoon work well *On hot toast or cumpets *make little zebra sandwiches, take cut the crust of your bread and using 4-5 pieces of bead spread your vegemite on the bread and stack them ontop of each other and cut the bread stack onto little squares *Make little soldiers *with tomato on toast *with honey on toast, sounds weird but counters the bitterness of vegemite *on crackers *With cheese then put under the grill until the cheese bubbles *theres even a recipe for a vegemite milkshake out there... There are probably many more ways to eat vegemite but these are just some of my favourites Enjoy =D

I put lowfat cream cheese (the veggie flavored kind), a few slices of turkey and a slice of cheddar cheese on mine. Or any combination depending on what I have available.

Or, I put peanut butter and jelly on them.

i take too plain rice cakes and put peanut butter on them like a sandwhich & when i want to be light on calories i spray them with i cant believe its not butter spray.

ps: never put them in a toaster they burn and get mushy ;]

dont put anything on! just get the Quaker brand, they have apple cinnamon (my favorite), caramel corn, peanut butter chocolate chip, and many of them are low in fat & sugars! maybe try some organic if you are worried about high fructose corn syrup though!!

I like to spread them with a little nut butter, like peanut butter, cashew butter, tahini, etc.
