"she" is correct - say it as though there were another "is" at the end of the sentence. He is taller than she (is).

While He is taller than she is correct it makes more sense and is easier to say He is taller than her.

In comparison structures, OBJECT pronouns are used after 'than' in informal contexts. So saying: "He is taller than HER" is correct.

However, in more formal contexts, SUBJECT pronouns should be used. Thus, the sentence: "He is taller than SHE(is)" would be more appropriate instead.

Although grammatically correct - he is taller than she [is] - you'll hear 'her' more often these days.
